Black Bean Salad

Super delicious veggie packed black bean salad is one of my favorite lunch or dinners.

Ingredients

  • 3 tbsp olive oil
  • 2 tablespoons lime juice
  • ½ tsp cumin
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 1 can black beans drained and rinsed
  • 1 bell pepper diced
  • ½ red or white onion diced
  • 1 medium zucchini quartered and diced
  • ½ cup shredded red cabbage

Instructions

  • Combine the oil, lime juice, cumin, salt, and pepper in a large bowl.
  • Add the beans, bell pepper, onion, zucchini, and red cabbage.
  • Toss to combine, taste and adjust seasoning, add more salt if needed.
  • Enjoy at room temperature or chilled.
