- 2 lbs chicken 2-4 breasts
- 1 tbsp olive oil
- ½ tsp sea salt
- ¼ tsp ground black pepper
- 1 bell pepper diced
- 1 cup sweet corn kernels
- 2 cups pineapple mango salsa
Preheat oven to 350 degrees.
In a large baking dish, add chicken.
Salt and pepper to taste.
Drizzle with olive oil.
Top with diced peppers, corn, and salsa.
Add lid to dish, bake for 25-30 minutes until chicken has reached an internal temperature of 165 degrees (this may vary depending on your chicken breasts - thicker breasts will take longer, thinner will be shorter.)
