For the cinnamon filling:

  • In a small mixing bowl, combine the brown sugar, flour, and cinnamon with a whisk until completely combined. Set aside.

For the Streusel:

  • Add all the streusel topping ingredients to a small mixing bowl, and mix with a fork until well combined. Set aside.

For the cake:

  • Preheat the oven to 350 degrees F. Prepare a 9x13 inch baking dish with parchment paper and cooking spray. Set aside.
  • In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  • In a separate large mixing bowl with a hand mixer, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs, vanilla, and sour cream. Mix until combined.
  • Add the dry mixture to the wet and mix until combined, scraping the sides of the bowl with a spatula as needed.

To assemble:

  • Pour half the cake batter into the prepared baking dish and smooth out with a spatula.
    Evenly distribute the cinnamon filling over top. Spread the remaining batter over the cinnamon filling. Sprinkle the streusel on top.
  • Bake for 50-55 minutes or until a toothpick can be inserted and come out clean.
  • Allow the cake to cool for 20 minutes before cutting.
