How To Make Coffee Cake

To make this recipe you will need the following ingredients:

  • Brown sugar and granulated sugar: Both sugars sweeten the streusel, with the brown sugar adding a hint of molasses flavor.
  • Ground cinnamon: Complements the sugars and adds warmth to the streusel.
  • All-purpose flour: Provides structure to the streusel, helping it hold together as a crumbly topping.

Cake:

  • All-purpose flour: Forms the structure of the cake.
  • Cornstarch: Softens the proteins in the flour, resulting in a more tender cake.

For the cinnamon filling:
In a small mixing bowl, combine the brown sugar, flour, and cinnamon with a whisk until completely combined. Set aside.
For the Streusel
Add all the streusel topping ingredients to a small mixing bowl, and mix with a fork until well combined. Set aside.
For the cake
Preheat the oven to 350 degrees F. Prepare a 9×13 inch baking dish with parchment paper and cooking spray. Set aside.
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.

In a separate large mixing bowl with a hand mixer, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs, vanilla, and sour cream. Mix until combined.
Add the dry mixture to the wet and mix until combined, scraping the sides of the bowl with a spatula as needed.

To assemble

Pour half the cake batter into the prepared baking dish and smooth out with a spatula.
Evenly distribute the cinnamon filling over top. Spread the remaining batter over the cinnamon filling. Sprinkle the streusel on top.
Bake for 50-55 minutes or until a toothpick can be inserted and come out clean.
Allow the cake to cool for 20 minutes before cutting.
