- 1 cup cauliflower rice
- ½ tbsp capers
- ¼ cup canned grilled red/piquillo peppers drained and diced
- ¼ cup feta
- 2 beets sliced into thin rounds, and then into half-circles
- lemons to garnish
In a jar or blender mix dressing ingredients.
Add all other ingredients to a bowl, top with dressing and enjoy!
