Oven Broiled Lobster Tails

  • Preheat broiler to high.
  • Set lobster tails on a baking sheet or in an oven safe dish.
  • With sharp kitchen scissors or a knife, carefully cut the top of the lobster tail shell down to the tip of the tail, avoiding the meat. Devein and remove any grit if needed.

  • Carefully pull shell down, so meat looks like it is sitting on top of shell and open.
  • To make it look even better, slide a lemon wedge or two under the lobster meat in between the meat and the tail.

  • Mix spices in a small bowl.
  • Sprinkle with spices.

  • Add small pats of butter along the lobster tail.
  • Place in oven on an upper middle rack.
  • Let cook until meat is opaque and white, about 8-10 minutes.
  • Remove and serve immediately with drawn butter.

Notes

  • Thaw first: If using frozen lobster tails, thaw overnight in the refrigerator or place in a sealed bag in cold water for 30–45 minutes. Pat completely dry before broiling.
  • Butterfly for best results: Use sharp kitchen shears to cut down the top of the shell, gently loosen the meat, and lift it above the shell for even cooking and a beautiful presentation.
  • Rack position matters: Place oven rack about 5–6 inches below the broiler. Too close can burn the butter before the lobster cooks through.
  • Cooking time guide: Broil about 1 minute per ounce.
    • 4–6 oz tails: 6–8 minutes
    • 7–10 oz tails: 8–10 minutes
    • 10–12 oz tails: 10–12 minutes
  • Doneness: Lobster is done when the meat is opaque white and firm. Internal temperature should reach 145°F at the thickest part. Do not overcook or it will become rubbery.
  • Prevent burning: Brush with butter before broiling and again halfway through cooking. If butter browns too quickly, loosely tent with foil.
  • Seasoning ideas: Add minced garlic, lemon zest, paprika, parsley, or a splash of white wine to the melted butter for extra flavor.
  • No broiler? Bake at 425°F for slightly longer (about 10–15 minutes depending on size).
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Reheat gently at 275°F with a little butter until just warmed through. Avoid microwaving to prevent toughness.
  • Serving tip: Serve immediately with melted butter, fresh lemon wedges, and chopped parsley.
