To make this recipe we will need to gather the following ingredients:
- Extra-firm tofu – The hearty protein base; pressing removes water so it crisps beautifully and holds onto the marinade.
- Soy sauce (or tamari) for tofu – Seasons the tofu from the inside and adds deep umami flavor.
- Rice vinegar (or lime juice) for tofu – Adds brightness and balance, cutting through the richness of sesame oil and sauce.

Step-by-Step Crispy Tofu Stir Fry
After gathering our ingredients, we will use the following process:

Cut and Dry Tofu
Cut tofu into small squares and thoroughly pat dry with paper towel, squeezing out excess moisture – but carefully, so it does not crumble.

Marinate Tofu
Whisk stir fry sauce in a bowl and pour over tofu. Let marinate 10-30 minutes.

Toss in Cornstarch
Toss, or dredge, in cornstarch.

Air Fry
Air fry tofu to crispy.

Stir Fry
Add broccoli, onion, and tofu and toss to cook to soft.

Add Noodles
Cook soba noodles to package instructions until soft. Drain and add to pan with vegetables, sauce, and tofu. Toss and top with spicy soy.

Serve & Enjoy
After noodles have been coated in sauce, top with sesame seeds (black or white) and, optional, scallions or chives. Serve and enjoy!
Crispy Tofu Soba Stir Fry Tips & Tricks
Press tofu well. Drier tofu = crispier tofu. Even 10–15 minutes helps a lot.
Cornstarch is the crunch secret. A light dusting gives you that crispy shell without deep frying.
Don’t skip rinsing soba. Rinsing stops cooking and keeps noodles from turning gummy in the pan.
Cook veggies until crisp-tender. That crunch balances the soft noodles and crispy tofu.
Toss noodles gently. Soba can break if you stir too aggressively — use tongs if you can.
Add tofu last (or on top). Folding it in is fine, but piling it on top keeps the crunchiest texture.
Spicy soy drizzle = instant upgrade. Add a little at a time so you control the heat and salt.

Crispy Tofu And Soba Noodles Stir Fry

Ingredients
Crispy Tofu
- 14 oz extra-firm tofu, pressed and cubed
- 2 tablespoons soy sauce, or tamari
- 1 tablespoon rice vinegar, or lime juice
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger, or ½ tsp ground
- 2 cloves garlic, minced (or ½ tsp garlic powder)
- 2 tablespoons cornstarch
- Cooking spray or 1–2 teaspoons neutral oil, for air fryer crisping
Noodles + Veggies
- 8 oz soba noodles
- 1 tablespoon neutral oil, avocado/vegetable
- 1 onion, thinly sliced
- 2 cups broccoli florets
- 2 stalks celery, thinly sliced
Stir Fry Sauce
- ¼ cup soy sauce, or tamari
- 2 tablespoons water
- 1 tablespoon rice vinegar
- 1 –2 tablespoons honey or brown sugar, use maple for vegan
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
Spicy Soy Sauce (to finish/drizzle)
- 2 tablespoons soy sauce
- 1 –2 teaspoons sriracha or chili garlic sauce, to taste
- 1 teaspoon rice vinegar, optional, for brightness
Finish
- Sesame seeds
- Optional: sliced green onions
Instructions
Marinate the tofu
- Press tofu well, then cut into cubes. Toss with 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sesame oil, ginger, and garlic. Let sit 10–15 minutes while you prep everything else.
Air fry the tofu
- Preheat air fryer to 400°F.
- Sprinkle tofu with 2 tbsp cornstarch and toss until coated (it should look lightly dusty, not gummy).
- Lightly spray the basket and tofu with cooking spray (or drizzle with a tiny bit of oil).
- Air fry 12–15 minutes, shaking halfway, until deeply golden and crisp.
Cook the soba noodles
- Cook soba according to package directions. Drain and rinse under cool water to stop cooking and prevent sticking. Set aside.
Make sauces
- Whisk together the stir fry sauce ingredients until smooth.
- Stir together the spicy soy sauce ingredients in a small bowl.
Stir fry the vegetables
- Heat 1 tbsp neutral oil in a large skillet/wok over medium-high heat.
- Add onion, broccoli, and celery. Stir fry 4–6 minutes until crisp-tender.
Toss noodles + sauce
- Add cooked soba noodles to the skillet. Pour in the stir fry sauce and toss for 1–2 minutes until glossy and thickened.
Finish with crispy tofu + spicy soy
- Gently fold in the crispy tofu (or pile it on top to keep it extra crisp). Drizzle with spicy soy sauce to taste.
- Finish with sesame seeds (and green onions if using).
