How to Make Garlic Roasted Rack of Lamb

To make this recipe, you’ll need:

  • Garlic: adds a delicious and pungent flavor to the lamb. It also helps to enhance the savory flavor of the lamb.
  • Rack of lamb: the star of the recipe! It’s a tender and flavorful cut of meat that pairs well with the garlic and other seasonings.
  • Olive oil: helps to create a crispy exterior on the lamb while also keeping it moist and tender.
  • Celtic sea salt: a type of salt that is less processed than table salt and has a slightly different flavor profile. It helps to season the lamb and enhance its natural flavors.

Bring the lamb to room temperature: Take the lamb out of the fridge and let it sit at room temperature for 30 minutes to 1 hour before cooking. This will ensure that the meat cooks evenly.

Score the fat: Score the fat on the lamb in a crosshatch pattern, which will help the fat to render and the meat to cook more evenly.

Use fresh garlic: Use fresh garlic instead of dried for a stronger and more pungent flavor. You can crush the garlic with the flat side of a knife and then mince it finely.

Garlic Roasted Rack of Lamb

Ingredients 

  • 1 rack of lamb, about 1 1/2 to 2 pounds
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of Celtic sea salt
  • ยฝ teaspoon of fresh cracked pepper

Instructions 

  • Preheat the oven to 400ยฐF.
  • In a small bowl, mix together the minced garlic and olive oil.
  • Season the rack of lamb with Celtic sea salt and fresh cracked pepper on both sides.
  • Heat an oven-safe skillet over high heat. Once hot, add the seasoned rack of lamb to the skillet and sear for about 2-3 minutes on each side until browned.
  • Brush the garlic and olive oil mixture over the entire rack of lamb.
  • Roast in a roasting rack to the preheated oven and roast for about 15-20 minutes, or until the internal temperature of the lamb reaches 135ยฐF for medium-rare, flipping once in the middle of cooking at about 10 minutes. Broil at end if needed for extra browning.
