The most important thing to know about cooking pork tenderloin: internal temperature is everything. Pull it at 145ยฐF (the USDA safe minimum) and let it rest tented under foil for 5โ10 minutes before slicing. That carryover will bring it to a perfect, juicy 150ยฐF. Go higher and you’ll dry it out โ pork tenderloin has very little fat to carry it through an overcooked finish.
