To make this recipe, we will need the following ingredients:
- Butter (to sear and sauce): Adds rich, creamy flavor and helps create a golden crust on the steak. Also forms the base for the garlic herb sauce.
- Sirloin steaks (cut into bites): A lean, flavorful cut that stays tender when seared quickly. Bite-sized pieces cook fast and absorb flavor well.
- Onion: Adds natural sweetness and depth as it caramelizes. Balances the richness of the steak and butter.
- Italian herb seasoning: A savory mix of herbs like oregano, basil, thyme, and rosemary — brings earthy, aromatic notes that pair beautifully with beef.

Once you’ve gathered your ingredients, we will use the following process:

Cut & Season
Cut steak bites into chunks and season generously with salt and pepper.

Sear
Add to very hot, heavy pan.

Add Onions
Add onions to pan and stir to prevent burning, but dont chase too much around the pan – let steak and onion brown.

Deglaze
Add bit of wine or stock to deglaze pan, and add garlic butter to finish.

Pat steak dry before cooking – Moisture prevents browning. Dry steak = better sear and flavor.
Use a hot pan – Preheat your skillet until it’s just about smoking. A hot pan gives those golden, caramelized edges you want.
Cook in batches if needed – Don’t overcrowd the pan. Too much steak at once = steaming, not searing.

Ingredients
- 2 tablespoons butter, plus more if needed
- 2 sirloin steaks, cut into bite-sized pieces
- 1 medium onion, sliced
- 3 –4 cloves garlic, minced
- 1 teaspoon Italian herb seasoning
- Salt and freshly ground black pepper, to taste
- ¼ cup beef or chicken stock, for deglazing
- 1 tablespoon Worcestershire sauce
- Chopped chives or green onions, for garnish (optional)
Instructions
Season the steak tips:
- Pat steak dry with paper towels. Season generously with salt, pepper, and Italian seasoning.
Sear the steak:
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Add steak tips in a single layer (work in batches if needed). Sear 2–3 minutes per side until browned and just cooked through. Remove and set aside.
Cook onions & garlic:
- In the same pan, add another tablespoon of butter. Add onions and cook until softened and lightly golden, about 3–4 minutes. Stir in garlic and cook 1 minute more.
Deglaze the pan:
- Pour in stock and Worcestershire sauce, scraping up any browned bits. Simmer 1–2 minutes to slightly reduce.
Return steak to pan:
- Add steak tips back into the pan. Toss everything to coat in the buttery sauce. Taste and adjust seasoning if needed.
Garnish & serve:
- Remove from heat and sprinkle with chives or green onions. Serve hot with your favorite sides.

Sirloin is a top choice — it’s lean, flavorful, and cooks quickly. You can also use ribeye or tenderloin if you’re feeling fancy.
Not for this recipe! The garlic butter, onions, and herbs bring all the flavor you need. But if you want to marinate, even 30 minutes in olive oil, Worcestershire, and garlic works great.
Absolutely. Use 1–2 teaspoons of dried Italian herbs if you don’t have fresh — just add them when you add the garlic so they bloom in the butter.
A cast iron skillet gives the best crust and even cooking. Stainless steel works too — avoid nonstick if you want a good sear.
