What is London Broil
London broil is a great way to make a whole meal out of an inexpensive cut of meat - it used to refer to only flank steak, but now is commonly made from lean, tougher cuts and usually refers to top round like we’re using in this recipe.
London broil is marinated to keep it tender and juicy, then broiled in the oven to medium rare perfection (you can cook longer for medium well, or well done.)
Because top round is tougher, it needs to be cooked HOT and FAST - making the broiler a perfect method for perfect London Broil!
London Broil Steak Marinade
The marinade in London Broil is critical, since we’re relying on it to help break down some of the connective tissue in this lean meat - and infuse tons of flavor.
You can change up the herbs as you see fit (I am known to double or even triple the amount of garlic - you can’t get enough garlic in my opinion) - but keep the amount of oil and vinegar the same. You can change up what kind of oil or vinegar you use - but be sure to use the same amounts.
How to Broil Steak
Always preheat your oven and broiler, and let it come to temperature before adding steak to oven.
I also try to add a cast iron pan or skillet to the oven when broiling steaks - so that the second the steak touches it it can cook, on both sides!
This seriously ups the temperature for your steak and helps you get a tender, juicy steak when you slice it.
Since top round doesn’t have much fat to render away, you want your steaks to cook as fast as possible - keep your steak close to the broiler (don’t let it touch or be close enough to have oil splatter start a fire), and cook it at as high a temperature you can get in your oven for the best results.
What to Serve With London Broil
