Rich and creamy avocado and cashew pesto is a perfect easy topping for chicken, fish, steak, and in pasta salads!
So at this point I’m going to make a confession – one of my biggest, deepest, darkest secrets.
I don’t really like avocados.
I know, I know – what kind of person am I?? I mean, I was born and raised in Southern California and everything.
Maybe all the later years in Colorado changed me- because I just don’t love avocados.
I’m fine with them *in* food though – and I know how good avocados are for a balanced diet full of omega 3 fatty acids.
This pesto is SO full of flavor… both avocado freaks and avocado-phobes will LOVE it!

- ½ cup cashews
- 1 cup fresh basil
- ½ cup parmesan cheese
- ½ cup fresh lemon juice
- 4 tbsp olive oil
- 1 avocado
- In a food processor, combine ingredients and blend until creamy and smooth.
