So at this point I'm going to make a confession - one of my biggest, deepest, darkest secrets.
I don't really like avocados.
I know, I know - what kind of person am I?? I mean, I was born and raised in Southern California and everything.
Maybe all the later years in Colorado changed me- because I just don't love avocados.
I'm fine with them *in* food though - and I know how good avocados are for a balanced diet full of omega 3 fatty acids.
This pesto is SO full of flavor... both avocado freaks and avocado-phobes will LOVE it!

- 1/2 cup cashews
- 1 cup fresh basil
- 1/2 cup parmesan cheese
- 1/2 cup lemon juice
- 4 tbsp olive oil
- 1 avocado
