Greek Pasta Salad merges the hearty textures of pasta with the fresh, vibrant flavors of the Mediterranean, including juicy tomatoes, crisp cucumbers, olives, and feta, all enlivened by a zesty lemon-oregano dressing.

Ingredients 

  • 8 ounces bowtie pasta
  • 1 cup grape tomatoes, sliced in half
  • 1 seedless cucumber, sliced into quarters
  • 1 bell pepper, diced
  • ½ small red onion, diced
  • 1 cup Kalamata olives, drained and sliced
  • 1 cup feta cheese, crumbed
  • ¼ cup chopped fresh parsley

For the Dressing

  • ½ cup olive oil
  • ¼ cup water
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
