I roast broccoli at a high heat so the edges turn golden?crisp while the stems stay tender, and dial up the flavor with bright lemon juice and plenty of nutty Parmesan for an irresistible flavor combo.

Simple Oven-Roasted Broccoli with Big Flavor: this recipe was designed in my home to be simple, incredibly easy, work in normal kitchens, and itโ€™s one of my favorite ways to turn a veggie into something everyone at the table loves!

Roasting broccoli is incredibly simple – you just need to trim and clean your broccoli, toss in seasonings, butter, or oil – and cook in the oven.

When roasting broccoli, you help to reduce the bitterness, and bring out a nutty, earthy flavor – without making broccoli soft and mushy.

Ingredients For Roasted Lemon Parmesan Broccoli

To make this recipe, we will need the following ingredients:

  • 3 broccoli crowns, cut into florets โ€“ The base of the recipe; fresh broccoli roasts beautifully at high heat, giving you crisp, caramelized edges and a tender interior.
  • 3 tablespoons olive oil โ€“ Helps the broccoli roast evenly and develop golden, crispy edges while adding richness and moisture.
  • 1 tablespoon garlic paste โ€“ Adds deep, savory flavor that infuses into the broccoli without the risk of burning like fresh garlic often does in high-heat roasting.
  • ยฝ teaspoon coarse salt โ€“ Enhances the natural flavor of the broccoli and balances the acidity of the lemon and richness of the cheese.
  • ยผ teaspoon ground black pepper โ€“ Adds a subtle bite and warmth that complements both the garlic and the parmesan.
  • ยผ teaspoon paprika โ€“ Gives the broccoli a hint of smoky depth and a light golden color boost as it roasts.
  • 1 tablespoon lemon juice โ€“ Brightens everything up with a hit of acidity; balances the savory elements and cuts through the richness of the cheese and oil.
  • 3 tablespoons grated parmesan cheese โ€“ Adds salty, nutty umami flavor that melts slightly when tossed with the hot broccoli for that craveable finish.

Steps to Roast Lemon Parmesan Broccoli

Once you’ve gathered your ingredients, we will use the following method:

Prep Broccoli

Wash broccoli and pat dry. Trim off excess woody stems.

Season

Mix herbs, parmesan, and seasonings in one bowl. Add broccoli to a large bowl and toss in olive oil and lemon juice. Sprinkle seasonings on top, making sure to toss so it is entirely coated.

Roast

Roast in the oven until lightly browned and softened.

Toss with additional parmesan, some fresh lemon juice, and enjoy!

Tips and Tricks for Perfect Lemon Parmesan Baked Broccoli

Use fresh broccoli florets for best results. Pre-cut bags are fine, but fresh-cut florets roast more evenly and caramelize better.

Dry your broccoli well after washing. Any moisture will steam the broccoli instead of letting it crisp in the oven.

Donโ€™t skimp on the olive oil. A light, even coating helps the broccoli brown and gives it that crispy edge we all love.

Roast at high heat. 425ยฐF is the sweet spotโ€”hot enough to caramelize quickly without overcooking the inside.

Toss with lemon and Parmesan after roasting. This keeps the lemon bright and the cheese from burning in the oven.

Add a pinch of red pepper flakes for a little kick, or a squeeze of extra lemon for more brightness.

Make it a meal: Toss leftovers with pasta, chickpeas, or quinoa for a quick lunch or light dinner the next day.

Air Fryer Roasted Lemon Parmesan Broccoli Method

To make this recipe in your air fryer, please use these modifications – just like our Air Fryer Broccoli recipe, but with a delicious twist!

  • Preheat air fryer to 450 degrees/high.
  • In a large bowl, toss broccoli crowns in olive oil and seasonings.
  • Add broccoli to air fryer basket.
  • Set timer for 15 minutes and cook.
  • Open air fryer to lightly toss broccoli every 5 minutes.
  • When broccoli is lightly browned and crispy on the crowns, and stems are soft to your liking, it is done.
  • Serve and enjoy!

Roasted Broccoli Recipe Ingredient Swaps

If you’re out of a certain ingredient or would like to change the recipe slightly, please consider these swaps:

  • Broccoli crownsswap: Frozen broccoli florets (thawed and well-dried) or broccolini. Cauliflower also works for a milder variation.
  • Olive oilswap: Avocado oil or melted ghee for a high-heat, neutral alternative. Use butter for extra richness (though it browns faster).
  • Garlic pasteswap: 1โ€“2 cloves minced fresh garlic or ยฝ tsp garlic powder. Roasted garlic paste adds a sweeter, mellow twist.
  • Coarse saltswap: Kosher salt, sea salt, or fine table salt (reduce quantity slightly if using fine salt to avoid over-seasoning).

Broccoli is done when it has browned and softened to your liking – broccoli crowns may slightly char, which brings a delicious earthy flavor (it will not taste burnt).

How long can I store leftover broccoli?

Broccoli can be stored in an airtight container in the refrigerator for up to five days, or frozen for up to four months.

Can I use frozen broccoli?

Yes, but it wonโ€™t crisp up the same way. If using frozen, thaw and pat dry thoroughly, then roast on a very hot pan for best results.

What type of parmesan works best?

Freshly grated Parmesan (off the block) melts better and has more flavor than the pre-shredded kind. But if all you have is the shaker-style cheese, it still works in a pinch.

Can I make this ahead of time?

Yes, but roasted broccoli is best fresh. You can prep and chop ahead, then roast right before serving. Leftovers reheat best in a hot oven or air fryer.

What should I serve this with?

  • Preheat the oven to 425 degrees F.ย 
  • Cut the broccoli into florets and add them to a large bowl with the olive oil, garlic paste, salt, pepper, and paprika and massage the oil and seasonings into the broccoli with your hands.
  • Spread the broccoli out on a large baking sheet and bake for 18 to 20 minutes until the large pieces are fork-tender.
  • Remove from the oven and transfer to a bowl to toss with lemon juice and parmesan cheese and serve immediately.
