My Pro Tip

What are Skillet Enchiladas?

Skillet enchiladas are an “unrolled” enchilada casserole made on the stovetop. Sauté onion and peppers, add black beans and spices, stir in enchilada sauce and corn tortilla strips, then simmer until the tortillas soften and soak up the sauce. Top with avocado, cilantro, and crispy tortilla strips.

Vegan Skillet Enchiladas Ingredients

  • Olive oil – for sautéing the veggies.
  • Onion, bell pepper, and garlic – the flavor base.
  • Zucchini – adds bulk and soaks up the sauce. (Swap in any veggie you like – see variations.)
  • Black beans – hearty plant-based protein. Pinto beans work too.
  • Cumin, chili powder, and oregano – classic enchilada spices.
  • Red enchilada sauce – mild or hot. Check the label to make sure it’s vegan.
  • Corn tortillas – cut into strips. They soften and soak up the sauce like noodles.
  • Vegan shredded cheese – optional, but melty and delicious.
  • Toppings – avocado, cilantro, lime, sliced jalapeños, red onion, and dairy-free sour cream.

Tips for the Best Skillet Enchiladas

  • Use corn tortillas for authentic flavor
  • Don’t overcook tortillas—they should be soft but not mushy
  • Taste and adjust seasoning before serving
  • Let sit 5 minutes before serving for best texture

How to Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or microwave.

These vegan skillet enchiladas are fast, flavorful, and endlessly customizable—the perfect easy dinner you’ll come back to again and again.

Are Vegan Skillet Enchiladas Healthy?

Yes, these vegan skillet enchiladas are packed with plant-based protein, fiber, and nutrient-dense vegetables. Black beans provide protein and fiber to keep you full, while vegetables like zucchini and peppers add vitamins and antioxidants.

Compared to traditional enchiladas, this version is:

  • Lower in saturated fat
  • Dairy-free and cholesterol-free
  • High in fiber for better digestion

You can make it even healthier by using a low-sodium enchilada sauce and loading up on extra vegetables.

Vegan Enchiladas Protein Content

We eat a lot of vegan meals when we are fasting (we are Orthodox and fast often), so it is important to get protein from natural sources. This dish is packed with protein because of lots of black beans

To boost protein even more, you can add:

  • Lentils
  • Tofu crumbles
  • Vegan ground meat alternatives

This makes it a great option for anyone looking for a high-protein vegan dinner.

Best Tortillas for Vegan Enchiladas

For the best flavor and texture, use corn tortillas. They:

  • Absorb sauce better
  • Provide authentic enchilada flavor
  • Are naturally gluten-free

If you prefer, you can use flour tortillas, but they will create a softer, less traditional texture.

How to Make Vegan Enchiladas in a Skillet vs Oven

Skillet enchiladas are faster and easier than traditional baked enchiladas – which is why they are one of my favorite dishes to make! So much easier and a lot less time.

Skillet method:

  • One pan
  • No rolling required
  • Ready in 30 minutes

Traditional baked enchiladas:

  • Require filling and rolling tortillas
  • Baked in a casserole dish
  • Take more time but have a layered presentation

This skillet version gives you all the same flavor with less effort – its perfect for busy weeknights!

How to Customize This Recipe

  • Add mushrooms for extra umami – I like to add sauteed mushrooms to this dish.
  • Swap black beans for pinto or kidney beans.
  • Add chipotle peppers for smoky heat, or lots of chopped jalapeños for a spicy kick.
  • Use sweet potatoes, wedge potatoes, or even hashbrowns to make it extra hearty.

What to Serve With Skillet Enchiladas

Mexican rice and cilantro lime rice are all stars with this dinner – we also love to serve it with green chile guacamole, sliced avocados, chips and salsa – or a simple green salad!

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 poblano peppers, seeded and diced
  • 3 cloves garlic, minced
  • 1 cup jarred nopales, nopalitos, rinsed and drained, or fresh nopales, cleaned and diced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 cans, 15 oz each pinto beans, drained and rinsed
  • 1 cup corn kernels, frozen, canned and drained, or fresh
  • 1 can, 10 oz Rotel diced tomatoes and green chiles, undrained
  • 1 can, 19 oz red enchilada sauce (vegan)
  • 8 corn tortillas, 6-inch, cut into 1-inch strips
  • 1 cup vegan shredded cheese, optional
  • For serving: avocado, cilantro, lime wedges, sliced jalapeños, dairy-free sour cream

Instructions

  • Cut tortillas into 1-inch strips. For crispy topping, toast about a quarter of the strips in a dry skillet or 400°F oven until golden; set aside.
  • Heat oil in a large oven-safe skillet over medium heat. Cook onion and poblanos 6-7 minutes until softened. Add nopales and garlic and cook 2-3 minutes more. (If using fresh nopales, cook until their sticky liquid evaporates, 8-10 minutes.)
  • Stir in cumin, chili powder, oregano, salt, and pepper; cook 30 seconds.
  • Add pinto beans, corn, Rotel with its juices, and enchilada sauce and bring to a gentle simmer.
  • Gently fold in the remaining tortilla strips. Simmer 5-7 minutes until softened and the sauce has thickened slightly.
  • If using, sprinkle with vegan cheese, cover, and cook 2-3 minutes until melted (or broil 1-2 minutes).
  • Top with crispy tortilla strips, avocado, cilantro, and a squeeze of lime.

Notes

  • Check the sauce: Some enchilada sauces contain chicken broth or dairy – read the label.
  • Gluten-free: Use certified gluten-free corn tortillas and enchilada sauce.
  • Storage: Up to 4 days in the fridge. Reheat with a splash of water.
