What You Need for Garlic Parmesan Roasted Carrots

To make this recipe, we will need the following ingredients:

  • Carrots – The star of the dish, becoming tender and naturally sweet as they roast.
  • Olive oil – Helps the carrots roast evenly, adding richness and encouraging caramelization.

Roasted Carrots Step-by-Step

Once you’ve gathered your ingredients, we will use the following method:

Roast

Ingredients 

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning, optional
  • ½ cup freshly grated Parmesan cheese
  • Optional: chopped fresh parsley, for garnish

Instructions 

  • Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease.
  • Add carrots to the baking sheet and toss with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.
  • Spread carrots in a single layer. Roast for 20 minutes, flipping once halfway through.
  • Remove from oven, sprinkle Parmesan evenly over the carrots, and return to the oven.
  • Roast an additional 5–10 minutes, until the carrots are tender and the Parmesan is melted and lightly golden.
  • Garnish with fresh parsley if desired and serve warm.
