Garlic Parmesan Roasted Carrots

Ingredients
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried Italian seasoning, optional
- ½ cup freshly grated Parmesan cheese
- Optional: chopped fresh parsley, for garnish
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease.
- Add carrots to the baking sheet and toss with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.
- Spread carrots in a single layer. Roast for 20 minutes, flipping once halfway through.
- Remove from oven, sprinkle Parmesan evenly over the carrots, and return to the oven.
