Our first week at my husbands seminary, we attended the weekly married students dinner where everyone brings a slow cooker or giant pot of vegetarian/vegan soup and some bowls and spoons and there is a big potluck. I had only made it to Boston a few days earlier, and didn’t really have my kitchen setup yet, but I knew I needed to make this freezer vegetable soup – its so easy, delicious, and simple to prep, I didn’t have to worry about what I did or didn’t have in the kitchen yet.

This is one of my favorite vegetarian soups to make in a pinch because it relies on pantry staples like stock and beans, a few basic herbs, and freezer vegetables – which are much friendlier on the wallet. This soup feeds a crowd on a budget and is easy to serve at gatherings – I’ve nicknamed it “Seminarian Soup” since I’ve brought it a few times to our gatherings.

This recipe is meant to be a base recipe – use what you have on hand, and find some of my swaps below.

Why You’ll Love This Soup

  • Pantry and freezer friendly – no chopping a pile of fresh vegetables, just one onion and some garlic.
  • Budget friendly – a bag of frozen mixed vegetables and a box of stock go a long way.
  • Ready in about 30 minutes – quick enough for a weeknight.
  • Naturally vegetarian – and vegan if you use vegetable stock and skip any cheese on top.
  • Endlessly flexible – use whatever frozen veggies and grain you have on hand.

Freezer Vegetable Soup Ingredient Notes and Substitutions

Frozen vegetables. A classic mixed bag of carrots, peas, corn, and green beans is my go-to, but almost any frozen vegetable works. Frozen veggies are picked and frozen at peak ripeness, so they hold their color and sweetness beautifully in soup.

  • Best picks: mixed vegetables, soup-blend vegetables, peas, corn, green beans, diced carrots, lima beans, or Italian-blend veggies. (I go for the giant Costco bags.)
  • Use with care: broccoli and cauliflower florets get soft fast, so add them in the last 3 minutes.
  • Skip: stir-fry blends with sauce packets.

Vegetable stock. Since stock is the backbone of the soup, use one you like the taste of. Low-sodium stock lets you control the salt. Chicken stock works too if you don’t need it vegetarian.

Cannellini beans. These creamy white beans add plant-based protein and fiber, so the soup really holds you over. Rinse them to remove the starchy canning liquid. Great northern or navy beans are an easy swap.

Garlic. Yes, six cloves. It mellows as it simmers and gives the broth real depth. Jarred minced garlic works in a pinch (about 1 tablespoon).

Italian herbs. A store-bought Italian seasoning blend is perfect. No blend? Use 1 teaspoon each of dried basil and oregano plus 1/2 teaspoon dried thyme.

Pearl couscous or rice. Both make the soup hearty – here’s how they compare:

GrainSimmer timeTextureGood to know
Pearl (Israeli) couscous8-10 minutesChewy, pasta-like pearlsFastest option; contains wheat
Long-grain white rice15-18 minutesSoft, comfortingNaturally gluten-free
Brown rice35-40 minutesNutty, firmAdd the vegetables at the end
Small pasta (ditalini, orzo)8-10 minutesClassic minestrone feelContains wheat

Gluten-free tip: choose rice and check that your stock is labeled gluten-free.

Freezer Vegetable Soup Ingredients

Serves 6 ยท Prep 10 minutes ยท Cook 25 minutes

  • 2 tbsp olive oil
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 1 tbsp Italian herbs and spices
  • 8 cups vegetable stock
  • 1 bay leaf
  • 2 cups frozen vegetables (mixed veggies, peas, corn, green beans, or carrots)
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 1/2 cups pearl couscous or rice
  • Salt and pepper, to taste

Step By Step Frozen Vegetable Soup Instructions

Diced white onions sautรฉing in oil at the bottom of a white pot for vegetable soup.

Sautรฉ the aromatics

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook 4-5 minutes, until soft and translucent. Stir in the garlic and Italian herbs and cook 1 minute more, until fragrant.

Season & Add Beans

Add beans and Italian Herbs seasoning, stir well to combine.

Cook Soup

Add the stock. Pour in the vegetable stock, add the bay leaf, and bring to a boil.

Cook the grain. Stir in the pearl couscous or rice. Reduce to a simmer. Pearl couscous needs about 8-10 minutes; white rice about 15-18 minutes.

Add the vegetables. Stir in the frozen vegetables (no need to thaw) and cannellini beans and simmer 5 minutes more, until heated through and the grain is tender.

Cous Cous Timing

If using small cous cous, add at the end of cooking. If using pearl cous cous or rice, add before cooking vegetables to soften.

Season & Serve

Remove the bay leaf. Season with salt and pepper to taste, then ladle into bowls.

5 Mistakes to Avoid

  1. Rushing the onion. Those 4-5 minutes of sautรฉing build the sweet, savory base. Raw-tasting onion makes a flat soup.
  2. Burning the garlic. Add it after the onion softens and cook just 1 minute – burnt garlic turns bitter.
  3. Adding the vegetables too early. Frozen veggies are already blanched, so they only need 5 minutes. Any longer and they turn mushy and dull.
  4. Salting before tasting. Store-bought stock varies a lot in sodium. Always taste at the end, then season.
  5. Forgetting the grain keeps drinking. Couscous and rice absorb broth as the soup sits. Keep extra stock nearby to loosen it up.

Frozen Vegetable Soup Tips and Variations

  • Add protein: add a second can of cannellini beans or a can of chickpeas along with the vegetables.
  • Add greens: a few handfuls of spinach or kale wilt in during the last 2 minutes.
  • Make it creamy: finish with a splash of cream or a sprinkle of Parmesan (skip both to keep it vegan).
  • Brighten it up: a squeeze of lemon juice just before serving wakes up all the flavors.
  • Swap the grain: small pasta like ditalini or orzo works too – cook until al dente.

Instant Pot and Slow Cooker Freezer Vegetable Soup

Instant Pot: Set to Sautรฉ and cook the onion, garlic, and herbs in the olive oil. Add the stock, bay leaf, grain, frozen vegetables, and cannellini beans. Seal and pressure cook on high for 3 minutes (pearl couscous) or 5 minutes (white rice). Let it naturally release for 10 minutes, then quick release. Remove the bay leaf and season.

Slow cooker: Sautรฉ the onion and garlic on the stove first for the best flavor. Add them to the slow cooker with the stock, herbs, bay leaf, frozen vegetables, and cannellini beans. Cook on low 4-6 hours or high 2-3 hours. Stir in the couscous or rice for the last 30 minutes.

What to Serve With Freezer Vegetable Soup

  • Crusty bread or garlic bread for dunking
  • A classic grilled cheese sandwich
  • Warm biscuits or cornbread
  • A simple green salad with lemon vinaigrette
  • Cheesy quesadillas or toasted pita
  • Shaved Parmesan and fresh parsley on top

Storage and Reheating

Store leftovers in an airtight container in the fridge for up to 4 days. The couscous or rice keeps soaking up broth as it sits, so add a splash of stock or water when reheating.

To freeze, let the soup cool completely and freeze for up to 3 months. For the best texture, freeze the soup before adding the grain, then cook fresh couscous or rice when you reheat.

FAQ

Do I need to thaw the frozen vegetables?

No – add them straight from the freezer.

Can I use brown rice?

Yes, but it takes 35-40 minutes to cook. Add the frozen vegetables in the last 5 minutes.

Can I use fresh vegetables instead?

Absolutely. Use about 2 cups chopped fresh vegetables and add firm ones like carrots and potatoes with the stock so they have time to soften.

How do you make vegetable soup taste better?

Build flavor at every step: sautรฉ the onion until golden, use plenty of garlic, simmer with a bay leaf, and finish with salt, pepper, and a squeeze of lemon. A Parmesan rind simmered in the broth adds a rich, savory boost. Is freezer vegetable soup healthy?

Yes. It’s packed with vegetables, low in fat, and naturally vegetarian. Choose low-sodium stock and brown rice for an extra-wholesome bowl.

Can you freeze vegetable soup with rice or couscous in it?

You can, but the grain softens and soaks up broth when thawed. For the best texture, freeze the soup base on its own and cook the grain fresh when reheating.

How long does vegetable soup last in the fridge?

Up to 4 days in an airtight container.

Why is my vegetable soup bland?

Usually it needs more salt, more acid, or both. Add salt a pinch at a time, then a little lemon juice or vinegar until the flavors pop.

Can I add meat?

Sure – stir in leftover shredded chicken, cooked Italian sausage, or browned ground turkey along with the frozen vegetables.

What to Serve With Freezer Vegetable Soup

We love this soup with a crust bread to soak up all the broth – serving with rice, cous cous, or a simple side salad work well.
