Our first week at my husbands seminary, we attended the weekly married students dinner where everyone brings a slow cooker or giant pot of vegetarian/vegan soup and some bowls and spoons and there is a big potluck. I had only made it to Boston a few days earlier, and didn’t really have my kitchen setup yet, but I knew I needed to make this freezer vegetable soup – its so easy, delicious, and simple to prep, I didn’t have to worry about what I did or didn’t have in the kitchen yet.
This is one of my favorite vegetarian soups to make in a pinch because it relies on pantry staples like stock and beans, a few basic herbs, and freezer vegetables – which are much friendlier on the wallet. This soup feeds a crowd on a budget and is easy to serve at gatherings – I’ve nicknamed it “Seminarian Soup” since I’ve brought it a few times to our gatherings.

Freezer Vegetable Soup Ingredient Notes and Substitutions
Frozen vegetables. A classic mixed bag of carrots, peas, corn, and green beans is my go-to, but almost any frozen vegetable works. Frozen veggies are picked and frozen at peak ripeness, so they hold their color and sweetness beautifully in soup.
- Best picks: mixed vegetables, soup-blend vegetables, peas, corn, green beans, diced carrots, lima beans, or Italian-blend veggies. (I go for the giant Costco bags.)
- Use with care: broccoli and cauliflower florets get soft fast, so add them in the last 3 minutes.
- Skip: stir-fry blends with sauce packets.
Vegetable stock. Since stock is the backbone of the soup, use one you like the taste of. Low-sodium stock lets you control the salt. Chicken stock works too if you don’t need it vegetarian.
Cannellini beans. These creamy white beans add plant-based protein and fiber, so the soup really holds you over. Rinse them to remove the starchy canning liquid. Great northern or navy beans are an easy swap.
Garlic. Yes, six cloves. It mellows as it simmers and gives the broth real depth. Jarred minced garlic works in a pinch (about 1 tablespoon).
Italian herbs. A store-bought Italian seasoning blend is perfect. No blend? Use 1 teaspoon each of dried basil and oregano plus 1/2 teaspoon dried thyme.
Pearl couscous or rice. Both make the soup hearty – here’s how they compare:

Freezer Vegetable Soup Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 6 cloves garlic, minced
- 1 tbsp Italian herbs and spices
- 8 cups vegetable stock
- 1 bay leaf
- 2 cups frozen vegetables (mixed veggies, peas, corn, green beans, or carrots)
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1 1/2 cups pearl couscous or rice
- Salt and pepper, to taste
Step By Step Frozen Vegetable Soup Instructions

Sautรฉ the aromatics
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook 4-5 minutes, until soft and translucent. Stir in the garlic and Italian herbs and cook 1 minute more, until fragrant.

Season & Add Beans
Add beans and Italian Herbs seasoning, stir well to combine.

Cook Soup
Add the stock. Pour in the vegetable stock, add the bay leaf, and bring to a boil.
Cook the grain. Stir in the pearl couscous or rice. Reduce to a simmer. Pearl couscous needs about 8-10 minutes; white rice about 15-18 minutes.
Add the vegetables. Stir in the frozen vegetables (no need to thaw) and cannellini beans and simmer 5 minutes more, until heated through and the grain is tender.

Cous Cous Timing
If using small cous cous, add at the end of cooking. If using pearl cous cous or rice, add before cooking vegetables to soften.

Season & Serve
Remove the bay leaf. Season with salt and pepper to taste, then ladle into bowls.
5 Mistakes to Avoid
- Rushing the onion. Those 4-5 minutes of sautรฉing build the sweet, savory base. Raw-tasting onion makes a flat soup.
- Burning the garlic. Add it after the onion softens and cook just 1 minute – burnt garlic turns bitter.
- Adding the vegetables too early. Frozen veggies are already blanched, so they only need 5 minutes. Any longer and they turn mushy and dull.
- Salting before tasting. Store-bought stock varies a lot in sodium. Always taste at the end, then season.
- Forgetting the grain keeps drinking. Couscous and rice absorb broth as the soup sits. Keep extra stock nearby to loosen it up.
Frozen Vegetable Soup Tips and Variations
- Add protein: add a second can of cannellini beans or a can of chickpeas along with the vegetables.
- Add greens: a few handfuls of spinach or kale wilt in during the last 2 minutes.
- Make it creamy: finish with a splash of cream or a sprinkle of Parmesan (skip both to keep it vegan).
- Brighten it up: a squeeze of lemon juice just before serving wakes up all the flavors.
- Swap the grain: small pasta like ditalini or orzo works too – cook until al dente.
Instant Pot and Slow Cooker Freezer Vegetable Soup
Instant Pot: Set to Sautรฉ and cook the onion, garlic, and herbs in the olive oil. Add the stock, bay leaf, grain, frozen vegetables, and cannellini beans. Seal and pressure cook on high for 3 minutes (pearl couscous) or 5 minutes (white rice). Let it naturally release for 10 minutes, then quick release. Remove the bay leaf and season.
Slow cooker: Sautรฉ the onion and garlic on the stove first for the best flavor. Add them to the slow cooker with the stock, herbs, bay leaf, frozen vegetables, and cannellini beans. Cook on low 4-6 hours or high 2-3 hours. Stir in the couscous or rice for the last 30 minutes.

Store leftovers in an airtight container in the fridge for up to 4 days. The couscous or rice keeps soaking up broth as it sits, so add a splash of stock or water when reheating.
