What is Baked Oatmeal?

Baked oatmeal is a warm and filling breakfast casserole, loaded with oats, milk – and in this case, apples, nuts, and cinnamon!

Baked oatmeal is healthy like oatmeal, but tastes like an oatmeal cookie – in casserole form.

It’s great with bacon, sausage, fruit salad, cardamom coffee, or a healthy beet smoothie!

What Fruit To Use In Baked Oatmeal

This oatmeal recipe is very versatile.

Feel free to substitute the diced apples with blueberries, strawberries, peaches, cranberries, raisins, or your favorite fruit!

You can also leave the fruit out all together if it’s not your thing. 

What Oatmeal to Use in Baked Oats

This recipe relies on rolled oats for the time and texture of our baking – but we’re answering some of our top baked oats questions – on other types of oats that can be used in this recipe and how they will change the dish:

Can I use quick cooking oats? 

You could substitute quick oats if you’re in a pinch but the texture will be considerably “mushier.”

If that doesn’t bother you, give it a try! 

Can I use steel cut oats instead? 

Steel oats should work fine but they will need a bit longer to cook properly.

Add 10 minutes to the cook time and keep and eye on the oats so they don’t burn.

How long can baked oatmeal leftovers last?

Store any completely cooled leftovers in an airtight container in the refrigerator for up to 4 days. 

Can I make baked oatmeal ahead of time?

Yes. Follow the instructions through step 5 but leave out the chopped apples.
Spread into prepared pan but do not bake. Cover and store in the refrigerator up to 2 days.
Add in the chopped apples and proceed with baking when you are ready to eat.
You may need to add a few minutes to the bake time since the oatmeal will be cold. 

Can I change they type of milk?

Any kind of milk will work in this recipe including 2%, skim, heavy cream, or any non-dairy milk.
Note that with a non-dairy milk it may change the flavor slightly. 

Can baked oatmeal be frozen?

Yes. Freeze the oatmeal in a freezer-safe container for up to 3 months.
To reheat, thaw the oatmeal completely, cover with foil and bake at 350° F for 15-20 minutes or until warmed through.
You may want to add a splash of milk before reheating to prevent the oatmeal from becoming too dry.

Easy Baked Oatmeal With Apples Recipe

Ingredients

  • 2 cups old-fashioned rolled oats make sure they are certified gluten-free if you are avoiding gluten
  • 4 teaspoons ground cinnamon
  • ? cup light brown sugar lightly packed
  • 1 teaspoon baking powder
  • ½ teaspoon finely ground salt
  • 2 large eggs room temperature
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • ¼ cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • 4-5 pitted dates diced
  • 1 cup diced apple about 1 medium sized apple
  • ? cup chopped pecans

Instructions

  • Preheat the oven to 350° F.
  • Spray an 8×8 baking dish with non-stick cooking spray and set aside. 
  • In a large mixing bowl, add the oats, cinnamon, brown sugar, baking powder, and salt.
  • Mix well. 
  • In a medium mixing bowl, whisk the egg, milk, vanilla, maple syrup, and applesauce until well-combined. 
  • Add the egg mixture to the oatmeal mixture and stir well. 
  • Fold in the diced apples and dates. 
  • Pour the oatmeal mixture into prepared pan and sprinkle top with pecans.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean. 
  • Serve immediately.

  1. Haven’t made this yet, but will give it a try. I’m looking for breakfast foods for getting out of house fast & then some for more normal breakfast, but they also should be chronic kidney disease (ckd) & diabetic friendly foods. Ohh, and want them to taste good.
