Bacon cheese quiche is a culinary masterpiece that marries the smokiness of bacon with the velvety texture of melted cheese, all nestled within a tender, golden crust. Each bite offers a harmonious blend of flavors and textures, from the crispiness of the bacon to the smooth, rich custard filling. This versatile dish serves as a perfect option for breakfast, brunch, or even a light dinner, easily paired with a variety of sides. Its simple elegance and comforting taste make bacon cheese quiche a beloved classic in kitchens around the world.

This quiche freezes very well so often I will make two and eat one and freeze the other for later. This is also a favorite quiche that I bring to new parents on a meal train or to women’s breakfast, everyone to tries it wants the recipe. Its bacon and cheese – what’s not to like!?

How to Make Cheesy Bacon Quiche

First assemble the following ingredients:

  • Pie crust (1) – The pie crust provides a flaky and buttery foundation, holding all the savory quiche ingredients together.
  • Salted butter (1 tbsp) – Salted butter enhances the richness of the dish and adds depth to the sautéed onions.
  • Yellow onion (1/2) – Onion, when sautéed to translucent perfection, infuses a sweet and aromatic flavor into the quiche.
  • Eggs (6) – Eggs create the custard base of the quiche, binding the ingredients together into a silky, cohesive filling.
  • Milk (½ cup) – Milk adds lightness to the custard, ensuring the quiche remains moist and tender.
  • Heavy cream (¼ cup) – Heavy cream contributes to the luxurious, velvety texture that makes quiche so indulgent.
  • Hot sauce (1 tsp) – A dash of hot sauce introduces a subtle kick, elevating the overall flavor profile with a hint of heat.
  • Salt (¾ teaspoon) – Salt is essential for seasoning, enhancing the natural flavors of the quiche ingredients.
  • Black pepper (¼ teaspoon) – Freshly ground pepper adds a slight bite and complexity to the quiche’s rich and creamy filling.
  • Cooked bacon (1 cup) – Bacon brings a smoky, savory crunch, adding a layer of irresistible texture and flavor.
  • Shredded cheese (1 ½ cups) – Shredded cheese melts beautifully into the quiche, creating gooey pockets of cheesy goodness throughout.

Use this Method

Prep Crust. Unroll pie crust and press into a 9″ pie plate, crimping the top edges if desired. Cover the pie crust in parchment paper, weigh down with beans or rice and bake for 15 minutes. Remove from the beans with parchment paper and bake for another 5 minutes till crust is mostly cooked. 

Cook Onion. Heat butter in skillet over medium heat, sautee the diced onion 5-7 minutes till it is beginning to brown.

Combine Eggs. In a large bowl, whisk together eggs, milk, heavy cream, hot sauce, salt and pepper.

Assemble. Sprinkle bacon, onion, and 1 cup of cheese into the pie crust and pour the egg mixture over top. Sprinkle remaining ½ cup cheese on top of egg mixture.

Bake. Preheat oven to 375°F. Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.

Tips and Tricks for Making Bacon Cheese Quiche

Pre-bake the Crust: To avoid a soggy bottom, pre-bake (blind bake) your crust for about 10 minutes before adding the filling. Use pie weights or dried beans on top of parchment paper to keep the crust from puffing up.

Crisp the Bacon: Ensure your bacon is cooked until crisp before adding it to the quiche. This not only improves the texture but also intensifies the flavor. Let it cool and then crumble or chop it into small pieces.

Shred Your Own Cheese: For the best melt and flavor, shred cheese from a block rather than using pre-shredded cheese, which often contains anti-caking agents that can affect the texture of your quiche.

Rest the Quiche Mixture: Let your egg and cream mixture sit for a few minutes after whisking. This allows the air bubbles to rise to the top and pop, resulting in a denser, creamier texture.

Season Well: Don’t forget to season your egg mixture with salt, pepper, and a pinch of nutmeg to enhance the flavors of the bacon and cheese.

Use Room Temperature Ingredients: Bring ingredients like eggs and dairy to room temperature before mixing. This helps them blend more smoothly and evenly.

Don’t Overmix: When combining your eggs and dairy, mix just until blended. Overmixing can introduce too much air and lead to a quiche that puffs up too much and then falls.

Add Some Greens: For added color and nutrition, consider stirring in some spinach, kale, or green onions into your quiche mixture.

Cheese on Top and Bottom: For an extra cheesy quiche, sprinkle a thin layer of cheese directly on the pre-baked crust before adding the egg mixture, and then add the rest of the cheese on top of the egg mixture.

Bake Until Just Set: Bake your quiche until the edges are set but the center still wobbles slightly. It will continue to cook and set after being removed from the oven.

Let It Rest: Allow your quiche to rest for at least 10-15 minutes before slicing. This resting period helps the quiche to set up, making it easier to cut and serve.

Customize Your Fillings: Feel free to experiment with different cheeses (like Gruyère, Swiss, or cheddar) and additional fillings (like mushrooms, tomatoes, or artichokes) to find your perfect combination.

Use High-Quality Cream: For a richer and creamier texture, use heavy cream or a combination of cream and whole milk in your custard mixture.
