My Harissa Chicken Thighs with Smashed Olives recipe is one I crave time and time again because its bursting with flavor, and insanely easy to make! I take chicken thighs rubbed in a spicy, garlicky harissa marinade, sear it until the skin is crackly and golden, then roast right in the same pan with sliced red onion and lots of briny smashed green olives. It’s spicy, salty, a little sweet, and totally crave worthy!

This is a genuinely weeknight-friendly recipe (it’s mostly hands-off once it’s in the oven), and works really well for meal prep and reheating through the week – especially with some cous cous.

I like to serve this chicken dinner straight out of the skillet, with rice pilaf, or some no knead bread to soak up the pan sauce.

Harissa Chicken and Olives Ingredients

  • 4 chicken thighs, bone-in and skin-on (or boneless for a quicker cook) – the star of the dish; thighs stay juicy and flavorful even if you cook them a few extra minutes
  • 3 tablespoons harissa paste – the backbone of the marinade, bringing smoky, spicy North African flavor; adjust the amount up or down depending on how spicy your harissa is
  • 3 tablespoons olive oil, divided – helps the marinade coat the chicken evenly and gets the onions cooking in the same pan
  • 1 tablespoon honey, optional – balances out the heat from the harissa with a touch of sweetness
  • 2 cloves garlic, minced – adds savory depth to the marinade
  • ½ teaspoon smoked paprika, optional – reinforces the smokiness and deepens the color of the finished dish
  • 1 red onion, thinly sliced – cooks down until soft and slightly sweet, and soaks up all the pan drippings
  • 1 cup green olives, preferably Castelvetrano, lightly smashed – smashing the olives releases more of their briny flavor into the sauce and makes them easier to eat

Harissa Chicken and Olives Method

Once you gather your ingredients, we will use the following process:

Mix Harissa Sauce

In a bowl, combine harissa paste, 1 tablespoon olive oil, lemon juice, cumin, paprika, salt, and pepper.

Rub this mixture all over the chicken thighs (under the skin too, if possible).

Bake

Bake for 25-30 minutes, until chicken is 165 degrees when measured with a digital meat thermometer.

Tips for the Best Harissa Chicken

Bone-in, skin-on thighs give you the crispiest skin and the most flavor, but boneless thighs work well too and cook a few minutes faster – just watch them closely so they don’t dry out.

Don’t skip the marinating time. Even 30 minutes makes a difference, but if you have a few hours (or can let it sit overnight in the fridge), the flavor gets noticeably deeper.

Searing the chicken skin-side down before it goes in the oven is what gives you that crispy, golden skin – don’t skip this step even though it adds a few extra minutes.

Use an instant-read thermometer to check doneness rather than guessing. Chicken thighs are done at 165°F, and because they’re more forgiving than chicken breast, it’s hard to overcook them even if you go a few degrees over.

Baste the chicken with the pan sauce halfway through roasting – it keeps the meat moist and builds even more flavor into the skin.

Taste your harissa before you use it. Brands vary a lot in heat level, so start with less if you’re not sure and add more to taste.

If the dish is spicier than you’d like, a dollop of Greek yogurt or a drizzle of extra honey on top when serving mellows it out nicely.

Storage & Make-Ahead

Store leftover harissa chicken in an airtight container in the fridge for up to 3 days.

To reheat, warm gently in a covered skillet over medium-low heat, or in a 350°F oven until heated through – this helps keep the chicken from drying out the way the microwave can.

You can marinate the chicken up to 8 hours ahead of time (or overnight) and keep it covered in the fridge until you’re ready to cook, which makes this an easy recipe to prep earlier in the day.

This dish isn’t a great candidate for freezing raw in its marinade, since the olives and onion don’t freeze particularly well, but cooked leftovers can be frozen in an airtight container for up to 2 months – just thaw overnight in the fridge before reheating.

  • Cherry Tomato Harissa Chicken – add a handful of halved cherry tomatoes to the skillet along with the onions for extra sweetness and color
  • Boneless & Quick – use boneless, skinless thighs and reduce the roasting time to 12-15 minutes for a faster weeknight version

Ingredients 

  • 4 chicken thighs, skin-on, bone in (or boneless thighs for quicker cooking)
  • 3 tbsp harissa paste, adjust heat to taste
  • 3 tbsp olive oil, divided
  • 1 tbsp honey, optional, for balance
  • 2 cloves garlic, minced
  • ½ tsp smoked paprika, optional, for depth
  • 1 red onion, thinly sliced
  • 1 cup green olives, preferably Castelvetrano, lightly smashed
  • ½ lemon, juice + zest
  • Fresh parsley for garnish

Instructions 

  • In a bowl, combine harissa paste, 2 tbsp olive oil, honey, minced garlic, smoked paprika, salt, and pepper.

  • Rub mixture generously over the chicken thighs.
  • Let marinate for 30 minutes (or up to 8 hours in the fridge for deeper flavor).

  • Optional: Sear the chicken. Heat a large oven-safe skillet (cast iron is best) over medium-high heat.

  • Flip and cook another 2 minutes.
