My kids absolutely love this super keto breakfast pizza recipe inspired by the Spanish classic Flamenco eggs – . My kids affectionately call this breakfast pizza!

How to Make Spanish Pizza Eggs
First assemble the following ingredients:
- Eggs (3) – Eggs create the rich, protein-packed base for this savory breakfast dish.
- Marinara (6 tbsp) – Marinara sauce adds bold, tangy tomato flavor reminiscent of classic pizza.
- Mozzarella cheese (¼ cup) – Shredded or torn mozzarella melts into gooey, creamy pockets of cheesy goodness.
- Pepperoni (6 slices) – Pepperoni brings a salty, spicy kick that makes these eggs taste like pizza.
- Fresh basil (2 tbsp) – Fresh basil adds a fragrant, herbaceous finish that brightens each bite.

Prep
Assemble the ingredients and heat the butter in a nonstick pan over medium high heat. Keep the lid handy.
Crack the eggs into the pan and wait just a few seconds for the bottom to cook and turn white.

Cook
Place the marinara sauce around the egg yolks and the mozzarella cheese on top. Place the lid on your pan and let the steam cook melt the cheese and cook the egg yolks on top.
Remove the lid and place pepperonis on the eggs. You can broil the pizza eggs in the oven if you want a brown top or simply top with salt, pepper, and fresh basil or whatever you like! Enjoy!
Tips and Tricks for Perfect Spanish eggs
Mix it up. You can add other pizza inspired toppings to this recipe. My personal favorite combination is extra cheese, mushroom and sausage- it works beautifully with the eggs!
Use a non-stick skillet. Eggs are extremely sticky and likely to get stuck so make our life easier by using a nonstick or cast-iron skillet. I prefer hexclad hybrid pans.
Add seasonings. If you want more flavor try sprinkling some onion and garlic powder or oregano on the top of your keto pizza eggs.
Turn up the Heat. If you want a little heat try adding a dusting of red pepper flakes just like you would on a pizza.

Leftovers can be kept in an airtight container in the refrigerator for 3-4 days. I prefer to make these fresh though.
Start with a very hot pan and add the sauce and cheese quickly. The sooner you get the lid on the sooner the cheese can melt, if you are quick the yolks will have just set by the time the cheese is melted.
Yes! The best way to achieve this is to place the pan in the oven on broil for 2-3 minutes instead of placing the lid back on the pan. The oven will deliver high heat to the cheese but may overcook the egg yolks in the process. Be sure to use an oven safe pan.
Yes, use dairy-free cheese or skip the cheese and load up on toppings like veggies or meat.
Use a thick marinara sauce and add it just before serving or heat it separately.
Fresh basil, oregano, thyme, or Italian seasoning all enhance the pizza flavor.

Spanish Pizza Eggs

Ingredients
- 1 tsp salted butter
- 3 eggs
- 6 tbsp marinara sauce
- ¼ cup mozzarella cheese, shredded or torn
- 6 slices pepperoni
- 2 tbsp fresh basil, sliced
- 1 pinch salt and pepper
Instructions
- Melt butter over medium heat in a nonstick skillet and heat till bubbly.
- Break the 3 eggs in the skillet and let cook a few seconds until the eggs start to turn white.
- Spoon the marinara sauce between the egg yolks then top with shredded mozzarella.
- Place a lid on the skillet for a couple minutes to cook the eggs and melt the cheese. You can remove the lid to tap the yokes to check their doneness, cooking times may vary depending how you like your eggs.
- Take off the lid and add the pepperoni. Place under the broiler to brown the cheese if you want.
- Top with a pinch of salt and pepper (to taste) and sliced fresh basil and enjoy!
