What to Do With Leftover Pie
Leftover pie is one of the best parts of the holidays – but eating the same slice over and over can get old fast.
Instead of reheating another piece, transform it into something new. Turning pie into a parfait gives you layers of flavor and texture – creamy, crunchy, sweet, and fresh, all in one bite!
This family recipe is one of the simplest ways to reinvent leftovers without any extra baking!

WHAT IS A PIE PARFAIT?
A pie parfait is a layered dish made with leftover pie, creamy elements like yogurt or whipped cream, and a crunchy topping. Instead of serving pie in slices, it’s broken down and rebuilt into layers- creating a totally different texture and flavor experience.
The result is lighter, more balanced, and perfect for when you want something a little less heavy than traditional pie.
Leftover Pie Parfait Ingredients
Assemble the following ingredients:
- Leftover apple – you can use berry pie, pumpkin, or any pie. If you use a crustless pie you can just add granola for the topping.
- Fresh berries – fresh berries bring a nice uncooked element to lighten up this parfait. You can use whatever berries you like.
- Berry yogurt – you can use plain or vanilla yogurt, whipped cream, or even ice cream if you want to make this a dessert.
- Butter – butter will help the baked pie crust clump together and add a soft richness to the topping.
Pie Parfaits Step by Step
Once you have assembled the ingredients use the following method:

Layer
Layer some of the pie filling into the bottom of a wine glass or whatever vessel you want to use. Add fresh berries, then the yogurt.

Make Topping & Finish
Melt the butter in a pan. Add the pie crust, crumbling it with a fork. Heat until it is lightly browned and clumping.
Finish. Add the topping to the parfait and enjoy!
Tips and Tricks for Perfect Leftover Pie Parfait
Use cold filling and warm crumble for contrast.
Don’t overmix- layers are key for texture.
Use clear glasses to show off the layers.
Add a pinch of cinnamon or nutmeg for extra flavor.
Taste as you go and adjust sweetness if needed.
Swap for dessert. You can swap the yogurt out for whipped cream or ice cream for a more indulgent dessert!
Swap the pie crust for granola. If you don’t want to reheat and crumble the pie crust, you can just top with a handful of your favorite granola.
Pick a yogurt flavor that works with your pie filling. You can always default to classic vanilla or even plain yogurt. If you want to use a flavored yogurt, try to choose one that will complement the flavor of your pie filling. If you aren’t sure just, try a little together before assembling.
Best Pies to Use For Pie Parfaits
One of the best things about this recipe is that it works with almost any pie you have on hand.
Some favorites:
- Apple pie – classic, slightly tart, and perfect with yogurt
- Berry pie – bright, juicy, and naturally sweet
- Cherry pie – rich and vibrant with a hint of tartness
- Pumpkin pie – perfect for fall, especially with granola
- Pecan pie – best for a dessert-style parfait with whipped cream
You can even mix different pies together for a layered flavor twist.
Pie Parfait Variations
Dessert Version: Swap yogurt for whipped cream or ice cream and drizzle with caramel or chocolate for a decadent treat.
Healthy Version: Use Greek yogurt, fresh fruit, and a light crumble topping for a protein-packed breakfast.
Kid-Friendly Version: Add granola, sprinkles, or even mini chocolate chips for a fun twist.
Holiday Brunch Version: Serve in clear glasses with layered fruit and a drizzle of honey for a beautiful brunch centerpiece.
Common Mistakes to Avoid
- Skipping the crust crumble (you need that crunch!)
- Using only pie without balancing with yogurt or fruit
- Overloading with sweet toppings (it can get too heavy)
- Making too far ahead (layers lose texture)
