Assemble the following ingredients:

  • Leftover apple – you can use berry pie, pumpkin, or any pie. If you use a crustless pie you can just add granola for the topping. 
  • Fresh berries – fresh berries bring a nice uncooked element to lighten up this parfait. You can use whatever berries you like. 
  • Berry yogurt – you can use plain or vanilla yogurt, whipped cream, or even ice cream if you want to make this a dessert. 
  • Butter – butter will help the baked pie crust clump together and add a soft richness to the topping.

Pie Parfaits Step by Step

Once you have assembled the ingredients use the following method:

Layer

Layer some of the pie filling into the bottom of a wine glass or whatever vessel you want to use. Add fresh berries, then the yogurt.

Make Topping & Finish

Melt the butter in a pan. Add the pie crust, crumbling it with a fork. Heat until it is lightly browned and clumping.

Finish. Add the topping to the parfait and enjoy!

Don’t overmix- layers are key for texture.

Use clear glasses to show off the layers.

Turn leftover pie into a delicious, addictive pie parfait the next morning! Crumbly topping and creamy yogurt make this a decadent use for leftovers!

Ingredients 

  • 1 slice of leftover apple or berry pie, or any pie with a crumble or pastry topping- separate filling from crust
  • ¼ cup fresh berries
  • ¼ cup berry yogurt, or whipped cream, ice cream if a dessert
  • 2 tbsp butter

Instructions 

  • In a wine glass, add filling of pie to the bottom.
  • Layer fresh berries over the pie filling, and then ladle berry yogurt on top.
  • Set aside.
  • In a nonstick pan, melt 2 tbsp butter.
  • Add pie crust to pan, crumbling it with the back of a fork or a spatula.
  • Heat until lightly browned – small clumps will form.
  • Add to the top of parfait, eat immediately!
