At Sweet C’s, I add lots of tips in all of my recipes – because I am a home cook without any formal training, and I find I am more confident making dishes when I understand why it works, and what each ingredient means to the flavor of a recipe. My goal is for even the most beginner home cook to feel empowered in the kitchen.

How to Make Slow Cooker Philly Cheesesteaks

These Slow Cooker Philly Cheesesteaks are packed with flavor and fall-apart tender beef, cooked low and slow with peppers, onions, and a rich broth until juicy and ready to pile onto toasted hoagie rolls. Topped with melty provolone or cheese sauce, they’re perfect for weeknight dinners, parties, or game day — no grill or stovetop required!

Crock Pot Philly Cheesesteak Ingredients

To make this recipe, we will need the following ingredients:

  • 2–2½ lbs chuck roast or sirloin, thinly sliced or shredded: The heart of the recipe. Chuck roast becomes incredibly tender and shreddable after slow cooking, while sirloin offers a leaner, sliced option with great beefy flavor.
  • 1 large onion, thinly sliced: Adds natural sweetness and richness as it softens and caramelizes during the slow cook. Essential for that classic Philly flavor.
  • 2 bell peppers (any color), thinly sliced: Brings color, crunch, and sweetness to balance the savory beef and onions. Red, green, or yellow all work well.
  • 3 cloves garlic, minced: Adds bold, aromatic flavor that deepens as it cooks — infusing the beef and broth with warmth and depth.
  • 1 tablespoon steak seasoning (or salt + pepper to taste): Boosts the meat’s natural flavor with a mix of herbs, spices, and salt. Customizable to your preferred seasoning blend.
  • 1 tablespoon Worcestershire sauce: Adds umami and depth — slightly tangy, slightly sweet, and rich. Helps mimic the depth of a classic cooked-on-a-griddle Philly steak.
  • 1 cup low-sodium beef broth: Keeps the meat moist during cooking while infusing it with savory flavor. Using low-sodium allows better control over final seasoning.
  • 6 hoagie rolls or sandwich buns: The base of your cheesesteak! Soft on the inside, sturdy enough to hold the juicy beef and toppings without falling apart.
  • 6 slices provolone cheese or Cheez Whiz: Melts perfectly over the hot beef. Provolone gives a mild, gooey finish, while Cheez Whiz brings that nostalgic Philly flavor.
  • Optional- banana peppers, sautéed mushrooms, mayo: Great for customization. Banana peppers add tang, mushrooms bring earthiness, and mayo adds creaminess and richness to each bite.

Tips and Tricks to Perfect Slow Cooker Philly Cheesesteaks

Use chuck roast for maximum tenderness – It breaks down beautifully in the slow cooker. Sirloin works too for a leaner option.

Slice meat thinly before cooking – If using pre-sliced steak (like sandwich steak), you can skip the shredding step.

Toast your rolls – This keeps the bread from getting soggy and adds a nice crunch.

Cheese it how you like – Provolone is classic, but Cheez Whiz, mozzarella, or American cheese all work!

Add mushrooms or banana peppers – Customize your sandwiches with your favorite steakhouse add-ons.

For a cheesy melt – Lay cheese slices on top of the meat in the slow cooker during the last 10 minutes so it melts into the mixture.

Crock Pot Philly Cheesesteak FAQs

Can I use frozen beef?

Yes, but thaw it first for food safety and even cooking.

What’s the best cut of meat for slow cooker cheesesteaks?

Chuck roast is ideal for shredding, but sirloin or eye of round can work for sliced steak versions.

Can I make these ahead of time?

Absolutely! The beef mixture stores well in the fridge for up to 4 days and freezes great for future sandwiches.

How do I keep the rolls from getting soggy?

Toast them lightly before adding the filling, and use a slotted spoon to drain excess liquid from the meat.

Can I cook them Overnight?

Yes — set it on low before bed and wake up to ready-to-assemble cheesesteaks. Just reheat and toast rolls before serving.
