Cheesy BBQ Beef and Biscuit Casserole with Grands biscuits is a hearty quick bar-be-que casserole classic the whole family will love! Great bbq casserole to bring to potlucks and parties!
While my parents were out recently, I made my dad one of the first meals I ever learned to make- and one of his favorites- our Cheesy BBQ Beef & Biscuit Casserole.
Besides being incredibly delicious, it is SO easy to make- less than 30 minutes total and only 5 ingredients!
Also be sure to check out this delicious Cheesy Little Smokies BBQ Biscuit Bake - a tasty, quick spinoff from this delicious recipe that your family is going to love!!!
My mom has been making a version of this for a long time, and I never really wrote down the recipe- it's something we just kind of simplified and adjusted on the fly over time.
I really, really like this mix though now that I have taken the time to write it all down. You can add your own twist on it, but this super simple recipe is our tried and true hit.
This is an awesome recipe for a Superbowl Party- except you'll need to make double because trust me - it will go FAST!
No worries though, it is so easy and quick to make you'll have no problem making more.
One note- I am suggesting KC Masterpiece BBQ sauce. This is fairly important because you want a sweet and thick sauce- so if you use another similar brand that is fine- but if you use something a little more vinegar-y or mustard-y you may want to add a tablespoon of brown sugar at a time until it tastes right.
Also, I don't always drain the fat off ground beef (lazy, I know)- but you HAVE to in this recipe or it will get soggy and look like an oil slick.
Tips to a Perfect Cheesy BBQ Beef and Biscuit Casserole:
-Give the biscuit layer a little pre-bake time for the best results. I pop them in the oven for about 10 minutes before adding the meat and cheese- this prevents your biscuit base from being gooey.
-You can also cook the beef and bbq sauce in a slow cooker for about 2 hours and then spoon into a partially pre-baked biscuit base to save space, or make this a one pot dinner by topping the meat with grands in the slow cooker.
-Reduce pans and mess- add the biscuits on top and pop in the oven for an upside-down one pot recipe!

I give this 5 Stars. Easy! I used a glass 9x13 used a little cooking spray at bottom. Flatten dough a little with rolling pin, before mushing the dough more in dish. Baked until golden on top. I did use Dijon mustard instead of regular cause we never use regular. Chopped some onions in it as well. Both my husband and my college student son liked it. I will make it for my sons friends and my kids cousins when they come over for a get together. Thank you for sharing 🙂

Made it for dinner tonight. My kid loved it, my fiancé didn’t. But it seems to be a bigger hit with the kids. For anyone having trouble with the biscuit dough, you’re supposed to precook it at 400 degrees.

Could you use shredded pork instead of ground beef?
Courtney ODell
Definitely! Really, you can use any protein in this recipe that goes well with cheese and BBQ sauce.

This was a great dish. My two year old loved it!

Success! I made these in a cupcake pan. Which were super simple when it came to serving. These would be great appetizers for any occasion or even a main course of dinner. The only complain I got was that I didn't make enough , even though my husband ate 7 of them! I used the left over mix for sliders for dinner the next day! This is a keeper

It was a home run for my family they loved it but I added onions to it everything turned out great

What kinds of vegetables would be good to sneak in this recipe for the kiddos?

Can crescent rolls be used instead of biscuits?
Courtney ODell
Yea! You could use any kind of dough, really.

Made this tonight with homemade biscuit dough, ground venison, and no mustard (due to an allergy). My husband said it was great and requested it again. My toddler also loved it. Thank you!!

Made this for dinner tonight. Followed the recipe exactly. Cooked at 350 for 30 minutes and the biscuits at the bottom were still doughy and not done. Sorry, but I won't be making this one again!
Courtney ODell
If you pre-bake the biscuits as mentioned in the post it helps to make sure your dough isn't gooey. Hope that helps!

Next time, press the biscuit dough to line a muffin tin (12 count) then top with cheese & bake. Real gourmet!

This was super easy and really tasty. I used the BBQ sauce I had on hand, which was hickory, and it tasted great. I would love to try it in the muffin tins next time. Thanks for the recipe!

How many does it serve? I want to make this dish but I need to make enougg for 12 people
Courtney ODell
I'd make 2-3 dishes then, depending on your serving size. For about 1 cups worth you can get 6 servings per dish- but this is something I've always had people ask for seconds and thirds!

What size casserole dish?
Courtney ODell
A 5 qt. oblong 🙂

can this recipe be frozen? Would you bake it, let it cool, then freezer or put it all together then freeze and bake when you want to use it?
Courtney ODell
It is best made that day, but it could freeze, too!

Very good! Added some sauted green pepper. Was even a hit with my 3 year old!

It was easy and protein packed! We enjoyed the meal. But my wife made biscuits herself. Going to try it with cooked bacon added.
Courtney ODell
You CAN'T go wrong with cooked bacon! If you like the flavor of this, check out my awesome bean bake (similar flavor, no biscuits) http://70.32.77.209/grandma-curlys-bean-bake/

My mom used to make a variation of this for us growing up. Instead of casserole form, she made individual "BBQ Cups" by using a muffin tin. It was one of mine (and my siblings) favorite meals as a child - and I still love it. It's cheap, easy, and yummy!
Andrea
My mom used to make this as muffin cups, too! And there was never any leftovers. Now I make it for my kids and it continues to be a crowd pleaser!
