Chicken and Fruit Salad With Poppyseed Dressing Recipe – delicious spinach salad bursting with fresh berries, citrus, poppyseeds, and tender, juicy chicken!

This salad is bursting with fresh berries, grapes, and tossed in a freshly squeezed citrus dressing for delicious, light, and craveable spinach chicken and fruit salad the whole family will love.

The best part about this salad is you can use any kind of chicken – rotisserie chicken breast, leftover grilled or baked chicken breasts, chicken thighs – the sky is the limit!

I’m including my favorite chicken recipes to serve with this dish – as well as how to make a knockout citrus poppyseed dressing that doubles as an amazing chicken marinade.

Easy Citrus Poppyseed Dressing Recipe

If you’re looking for a delicious, easy, slightly sweet, and bright citrus salad dressing, this is my absolute favorite.

This dressing can be stored in an airtight container in your refrigerator for up to one week.

To store longer or make in bulk to freeze, I like to pour this dressing into ice cube trays, then let them defrost when I need it – go ahead and whip up a big batch of this dressing!

This citrus poppyseed dressing is fabulous on chicken, fish, steak, vegetables, pasta, rice, and in cous cous – and as a fabulously fresh marinade. The sky is the limit!

Citrus Poppyseed Dressing Recipe

  • 1/3 c. extra-virgin olive oil
  • 1/4 c. freshly squeezed orange juice
  • 1 tbsp fresh squeezed lime juice
  • 1 tbsp fresh squeezed lemon juice
  • 3 T. honey
  • 1/4 tsp. kosher salt
  • 1 1/2 tsp. poppy seeds

In a small bowl, whisk ingredients together until well combined.

What Chicken To Use in Fruit Salad

If you’re looking for delicious and easy recipes for chicken to use in this fruit salad, I have a ton of options!

I try to stick to plainer chicken recipes (spicy buffalo chicken, tomato braised chicken, and chicken with tons of intense flavor are not great with fruit – stick to simple grilled or baked preparations) so they don’t overpower the fruit and citrus dressing.

If you’re looking for the best baked chicken recipe ever – look no further.

This chicken is so easy – season, pop in the oven (or pre-sear for a lovely golden color), and bake!

For salad, I like to dice my baked chicken into 1″ bites so it is easy to eat.

Make sure to let chicken cool for 10 minutes to prevent all the juices running out when you cut it up for this salad – I actually prefer using leftover chicken for this salad from the day before!
