This classic recipe is so simple and delicious, you’re likely to have everything on hand – or be able to find it at most grocery stores. 

  • Eggs (8) – Hard-boil 8 eggs, then cool, peel, and chop them into small pieces for the salad base.
  • Mayonnaise (1/2 cup) – Stir in mayonnaise to create a creamy texture that binds the ingredients together.
  • Dijon mustard (1 teaspoon) – Add Dijon mustard for a tangy flavor that complements the eggs.
  • Green onion (1/4 cup) – Finely chop green onion to add a mild, fresh onion flavor and a bit of crunch.
  • Celery (1/2 cup) – Dice celery for a crisp texture and subtle vegetal taste.
  • Lemon juice (2 teaspoons) – Squeeze in lemon juice to brighten and enhance the flavors of the salad.
  • Salt and pepper – Season with salt and pepper to taste, balancing the flavors to your preference.
  • Paprika (1/4 teaspoon) – Sprinkle paprika for a hint of smokiness and a pop of color.

Use this Method:

If you’d like to lighten up this recipe slightly, you can swap the mayonnaise for greek yogurt. 

If you have a favorite mayonnaise mustard combination you like, you can swap it for the same amount.

How To Boil Eggs

There are a couple of easy secrets to cooking eggs perfectly – if you follow these tips you’ll have perfect, easy to peel, great for egg salad boiled eggs! 

In a heavy large pot with thick base, cover eggs with cold water (don’t use hot water!) and bring to a boil.

Remove the pot from the heat, cover, and let sit for exactly 14 minutes.

After boiled, you’re ready to chill, peel, and chop your eggs! 

How To Easily Peel Eggs

Tap the eggs with the back of a spoon gently.

Once your boiled eggs are cooked, crack the eggs and place in cold water for 10 minutes.

Then try to peel them – the shock of cold water helps the shells come off quickly.

Eggs can sit in water overnight for incredibly easy to peel eggs.

When you’re almost ready to serve, peel eggs.

The Best Egg Salad

The Best Classic Egg Salad Recipe – easy delicious egg salad from perfect hard boiled eggs – perfect for creamy, rich egg salad sandwiches!

Ingredients 

  • 8 eggs
  • ½ cup mayonnaise
  • 1 teaspoon dijon mustard, or 1/4 teaspoon powdered mustard
  • ¼ cup green onion, chopped
  • ½ cup celery, chopped
  • 2 teaspoons lemon juice
  • ¼ teaspoon paprika
  • salt and pepper to taste

Instructions 

  • Place egg in a saucepan and cover with cold water.
  • Bring water to a boil and immediately remove from heat.
  • Cover and let eggs stand in hot water for 10 to 12 minutes.
  • Remove from hot water, cool, peel and chop.
  • Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onion.
  • Season with salt, pepper and paprika. Taste and add more salt as needed.
  • Stir and serve on your favorite bread.
