This quick and simple cinnamon bread can be eaten as-is or drizzled with icing for a delicious cinnamon roll taste. Try it toasted with your coffee, as a snack, or as the base for an amazing french toast!

There are several things to really love about this bread. It’s a quick bread, which means it goes from the bowl to the oven. It’s so easy to make, you’ll add it to your regular baking rotation.
One of the advantages of this no-yeast recipe is that you don’t have to wait because there’s no rise time.
No kneading in this easy recipe means less work.
The crumb of this bread is a little denser and less cake-like, and it’s bursting with that delicious cinnamon flavor.
Because of the ideal texture, this bread is great a base it is for an amazing bread pudding.
The leavening agents, eggs, and baking powder, give it a perfect domed top.
Consider drizzling this bread with frosting or glaze to get more on a cinnamon bun-like flavor.
Because this bread doesn’t contain nuts, my kids love it as a special treat tucked into their lunchboxes.

How To Make Cinnamon Bread
This bread couldn’t be easier – there are just 3 major steps – Mix, Swirl, and Bake.
Prepare Oven and Ingredients.
- Preheat the oven to 350°F.
- Spray a 9×5 loaf pan with baking spray, or line it with parchment paper and spray with baking spray, set aside.
Mix Batter.
- In a medium-sized bowl, stir together the flour, baking soda, cinnamon, baking powder, and salt until combined, set aside.
- In a large bowl cream together the butter, sugar, and brown sugar for 2 minutes until combined. Add the egg and mix it in. Add the buttermilk and vanilla, slowly stir it in until combined. Add the dry ingredients to the wet and mix it in until just combined, with no dry patches.
Next, add to the prepped loaf pan, and prepare the top.
- In a small bowl stir together the sugar and cinnamon.
- Add ½ of the batter to the pan and smooth it out.
- Add ? of the cinnamon mixture on top evenly.
- Add the remaining batter, smooth out the top.
- Add the remaining cinnamon sugar, swirl the top with a butter knife.
Bake.
- Bake for 40-45 minutes until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes.
- Take the bread out of the pan and let it cool completely on a wire rack.
Tips To Perfect Cinnamon Bread and FAQs
Measure flour by scooping lightly with your measuring cup and using a butter knife or other straight edge to scrape across the top.
When mixing the dry and wet ingredients, make sure not to overmix. Overmixing can make your bread tough and chewy.
Mixing to “just combined” also helps the wet ingredients retain air to keep your bread nice and fluffy.
This bread can stay up to three days in a sealed container at room temperature.
Always make sure to preheat the oven to 350 degrees before starting this bread – since there’s no rise time this is a quick bread and will pop straight in the oven.
Grease a loaf pan with non-stick spray or butter and/or line it with parchment paper.
I like this loaf pan.
Hot tip: layering a sheet of parchment paper across the side of the pan gives you a nice little handle to lift your bread up with when it has cooled! Try it with a well prepped or nonstick loaf pan!

You can also make this a spiced bread by adding a pinch of cloves, nutmeg, or allspice, or all three.
Cinnamon bread can be stored in an airtight container for up to three days.
Many baking recipes call for eggs and dairy products to be added and mixed at room temperature.
The reason for this is two-fold:
First, eggs and dairy products are much easier to mix when they’re at room temperature than when they’re cold.
Imagine trying to mix butter straight from the refrigerator rather than butter that’s been allowed to warm up on the counter!

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- For the filling and topping:
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F.
