Easy Iced Apple Bread

Made using baking powder, you won’t have to wait for the bread to rise before baking it! The greek yogurt and milk make your apple fritter bread soft and moist, and the delicious apple mixture adds a deliciously sweet texture the whole family will love. Topped with a sweet vanilla glaze, this apple quick bread is a delicious treat to serve with coffee or tea. 

Whether you want a quick and easy grab ‘n go breakfast or a sweet snack for the middle of the day, this quick bread will be just as soft and moist for up to 4-days. So, it’s perfect for the whole week!

How to Make Apple Fritter Bread

Moist, sweet and delicious, this apple fritter quick bread is sure to become your new favorite! Make it on Monday and enjoy it every day of the week. For this recipe, you will need the following ingredients:

  • Salted butter– Allow the butter to sit on the counter at room temperature for about 30-minutes to soften. 
  • Granulated sugar– All bread is made with regular white sugar. Be sure to pack your measuring cup. 
  • Eggs– Check your eggs in a bowl of water before using them. If they float, throw them out. 
  • Vanilla– You will need vanilla for the bread as well as for the sweet glaze. You can use white or dark vanilla. 
  • Greek yogurt– I use plain Greek yogurt, but you could also use vanilla Greek yogurt if you prefer. 
  • Milk– You can use whole, skim, or 2% milk for this recipe. 
  • Baking powder-Baking powder is used to ensure that your quick bread rises. 
  • Flour– When measuring your flour, scoop the flour into your measuring cup with a spoon then level it off with a butter knife. 
  • Brown sugar– Be sure to pack your brown sugar in the measuring cup. You can do this by using the measuring cup to scoop the brown sugar. 
  • Cinnamon– Apples and cinnamon are just meant to go together! 
  • Apples– I use about 2 medium Granny Smith apples, but you can use any apples you prefer. 
  • Confectioners sugar– This is powdered sugar. You will need it for the glaze as regular sugar will be grainy and change the texture and flavor of the glaze. 
  • Cream– For the glaze, I use cream as it makes a thicker glaze, but you can use milk as well. 

After you have gathered up all your ingredients, follow the steps below to make deliciously quick sweet bread!

  1. First, preheat your oven to 350?. Then, spray a 9×15 inch loaf pan with non-stick spray and set it to the side. 
  2. In a large mixing bowl, beat the butter and sugar together until smooth. 
  3. Beat the eggs in 1 at a time. Then, mix in the vanilla. 
  4. Next, mix in the baking powder and flour just until blended. 
  5. Add your Greek yogurt and milk into the batter. Gently mix until smooth and set the batter aside. 
  6. In a separate mixing bowl, stir together the brown sugar and cinnamon to make the apple coating. Set aside. 
  7. In another bowl, mix together the brown sugar, cinnamon, and sugar for sprinkling. 
  8. Peel and dice your apples, and then add them to the sugar and cinnamon mixture. Coat the apples evenly. 
  1. Pour half of the bread batter into the loaf pan. Then, add a layer of half the apple mixture. 
  2. Sprinkle ½ of the  brown sugar, cinnamon and sugar mixture on top of the apples. Then, swirl a knife through the layers. 
  3. Repeat step 9 & 10 one more time. Batter, then apple mixture, then end with the brown sugar-cinnamon mixture. Again, use a knife to swirl through the layers. 
  4. Put the loaf in the oven and bake for 50-minutes. Check it with a toothpick. If it doesn’t come out clean, cook the bread for 5-minutes at a time checking after each 5-minutes. 
  5. Allow the loaf to cool for 30-minutes before adding the glaze. 
  1. While the loaf is cooling, whisk together the powdered sugar, cream, and vanilla until smooth. 
  2. Add the glaze and Enjoy!

Tips for the Best Apple Fritter Bread &FAQs

  • Don’t overmix the batter. You don’t want too much air in your bread batter. 
  • If you coat the apples in the cinnamon sugar mixture and don’t work quickly, the apples will begin to sweat and release juices. I just recommend you use a slotted spoon to drain some of the liquid before adding them on top of each layer of batter.
  • If the loaf starts getting dark on top before the loaf is fully baked, put a piece of tin foil over the top to protect it from burning.
  • You can thicken the glaze by using more confectioners sugar, or thin it by using more cream.

For this recipe, you will need to cook the bread at 350?.

How long does apple fritter bread take to make?

It will take you about 20-minutes of prep time, and an hour of cook time to make this recipe. So, it should be ready to eat in about 1 hour and 20-minutes. 

What other apples can I use?

I like to use Granny Smith apples, , but would also recommend Honeycrisp, Braeburn, Pink Lady, Gala, or Fuji apples. All of these have a good flavor and add a nice texture in the bread. 

Could I make this recipe as muffins or in a bundt pan?

Absolutely! For a bundt pan, you would prepare the recipe exactly the same way, but you may need to adjust the cook time and begin checking it at 45-minutes. If you make this recipe into muffins, you will want to check your bread after 20-minutes. 

Can I add nuts to apple fritter bread?

Sure! Chopped walnuts or pecans would pair perfectly with this bread. I would add about a cup to the batter along with the flour. 

Why is there a glaze?

I personally think the glaze makes this quick bread taste more like apple fritters, and is delicious. However, it is totally optional. 

What can I use instead of yogurt?

If you don’t have yogurt, you could just use milk instead. Just increase the milk from ¼ cup to ? cup. I would also recommend adding a tablespoon of vinegar to the milk. Let it sit for a couple minutes before adding it to the batter.

Ingredients

  • ½ cup salted butter softened
  • ? cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 ½ cups flour
  • ½ cup greek yogurt
  • ¼ cup milk
  • Apple mixture:
  • 2 medium apples granny smith – about 2 cups
  • ½ cup brown sugar packed
  • 1 teaspoon cinnamon
  • Brown sugar – Cinnamon mixture
  • ¼ cup brown sugar packed
  • ½ Tablespoon cinnamon
  • 1 teaspoon sugar
  • Glaze:
  • 1 cup confectioners sugar
  • 3 Tablespoon cream or milk
  • 1 teaspoon vanilla white or dark

Instructions

  • First, preheat your oven to 350?. Then, spray a 9"x5" standard loaf pan with non-stick spray and set it to the side. 
  • In a large mixing bowl, beat the butter and sugar together until smooth. 
  • Beat the eggs in 1 at a time. Then, mix in the vanilla. 
  • Next, mix in the baking powder and flour just until blended. 
  • Add your Greek yogurt and milk into the batter. Gently mix until smooth and set the batter aside.
