During the summertime I try not to turn on the oven so I am always looking for protein packed lunch and dinner options that can be assembled ahead of time without cooking involved. This zesty Italian pasta salad is one of my go-to recipes for meal prep in summertime since it meets all the criteria. You can mix it up with this recipe by adding different vegetables and trying different dressings with it. This recipe works well with gluten free pasta as well!

This dish is perfect for picnics, potlucks, or as a refreshing side for summer barbecues. Its combination of textures and flavors makes it a crowd-pleaser that’s both satisfying and delicious.

First assemble the following ingredients:
