Sweet and Salty White Chocolate Popcorn
There are some recipes I see online that I just HAVE to try out because they look so good.
I’m not a huge dessert person (which I am sure is a major disappointment to a bunch of my readers), but mostly because I feel like cooking sweets is just harder. I don’t know why – because most of the time they aren’t – but I guess I am just a more savory cook when it comes to things I want to try.
But when I saw this White Chocolate Cake Batter Popcorn from Tasty Kitchen, I HAD to make it! It is sweet and salty (I used salted kennel-corn style popcorn, since I like a little salty with my sweet), and so fun to make.
I mean – this stuff is sooooo good. It’s all of my favorite things in a bowl topped with sprinkles and unicorn tears good. Just try to not eat the whole batch. I dare you! I did make a small modification to make the batter mix a bit more spreadable and easy to work with, but this simple recipe is a major hit.
My kids really loved this recipe since I let them help make it. It is super simple – just make sure you do the melting of the chocolate and make sure they don’t mix it when it is still hot, and then let them get to work mixing the topping, or adding the sprinkles!
This popcorn is perfect for a fun and festive party, a baby shower, or a wedding shower (I actually found this recipe thanks to my friend who posted it on facebook when she made it for her sister in law’s bridal shower.)
How to Make Cake Batter White Chocolate Popcorn
First assemble the following ingredients:
- White chocolate melting candy (1 ½ cup) – These smooth, creamy candies melt effortlessly, providing a rich, velvety base that envelops each popcorn kernel in luscious sweetness.
- Vegetable Shortening (¼ cups) – Added to the white chocolate, vegetable shortening ensures a smoother, more manageable consistency, making it easier to coat the popcorn evenly.
- Vegetable Oil (2 tbsp) – A drizzle of vegetable oil can thin the chocolate mixture slightly, enhancing its flow for a more uniform coating on the popcorn.
- White or yellow Cake Mix (1 ½ cup) – The white cake mix infuses the treat with the classic, beloved flavor of vanilla cake, adding a hint of nostalgia and depth to the popcorn’s taste profile.
- Popcorn (6 cups) – The popcorn serves as a light, airy canvas, its neutral taste and satisfying crunch forming the perfect backdrop for the sweet coating.
- Sprinkles (2 cups) – Adding a dash of fun and color, sprinkles not only decorate this snack but also introduce a subtle texture contrast to the creamy, soft chocolate.
Use this Method
Meat Chocolate. Microwave white chocolate and shortening (or slowly melt using a double boiler), stirring every 20 seconds. When chocolate is soft and runny, stir in vegetable oil.
Add Popcorn. Add cake mix to white chocolate mixture, stir well. Pop the popcorn if you haven’t already, I like to use an air popper. Add popcorn to large bowl, and drizzle chocolate and cake batter mixture over popcorn, while tossing (like you’re dressing a salad). Add sprinkles.
Finish. Let harden and enjoy!
Tips and Tricks for Sweet and Salty Popcorn
- Choose the Right Popcorn:
- Opt for plain, air-popped popcorn to avoid competing flavors from butter or salt. This will ensure the cake batter and white chocolate flavors shine through.
- Quality Ingredients:
- Use high-quality white chocolate for a smoother, richer taste. Chocolate chips designed for melting can also work well.
- When it comes to cake mix, choose your favorite brand or flavor. Funfetti or vanilla works great for that classic cake batter taste.
- Melting the Chocolate:
- Double Boiler Method: Melt your white chocolate over a double boiler to avoid burning. This method provides gentle, even heat.
- Microwave Method: If using a microwave, melt the chocolate in short intervals, stirring between each, to prevent overheating and clumping.
- Mixing in the Cake Batter:
- After melting the white chocolate, sift in the dry cake mix to avoid lumps. Mix well until it’s smooth and fully incorporated.
- Consider adding a small amount of vegetable oil or coconut oil to the chocolate and cake mix blend to achieve a smoother consistency that’s easier to work with.
- Coating the Popcorn:
- Work quickly while the chocolate and cake batter mixture is still warm and fluid for easier coating.
- Use a large bowl and a gentle folding motion to coat the popcorn evenly without crushing it.
- Adding Extras:
- For an extra pop of fun, mix in colorful sprinkles immediately after coating the popcorn, before the chocolate sets. This will ensure they stick well.
- Consider adding a pinch of salt to the mixture before coating to balance the sweetness and enhance the flavors.
- Setting the Popcorn:
- Spread the coated popcorn on a baking sheet lined with parchment paper in a single layer to avoid clumps.
- Allow the popcorn to set at room temperature or chill it in the refrigerator for a faster setting. Avoid the freezer as it can cause condensation and make the popcorn soggy.
- Storage:
- Store the popcorn in an airtight container to keep it fresh and crunchy. It’s best enjoyed within a few days of making it.
- Customization:
- Feel free to add your twist by mixing in nuts, dried fruit, or even small candy pieces for added texture and flavor.
- Experiment with different cake mix flavors to customize the popcorn to your liking.
- Serving Suggestions:
- Serve in fun containers like paper cones or colorful bowls for parties or movie nights to add to the festive atmosphere.
FAQS
It’s best to use plain, air-popped popcorn to ensure the flavors of the cake batter and white chocolate are prominent. Avoid using buttered or heavily salted popcorn as it can interfere with the sweet flavor profile.
Yes, but choose a natural or light version with minimal butter and salt. Remember, the plainer the popcorn, the better it will carry the cake batter and white chocolate flavors.
To prevent seizing, melt the chocolate slowly using a double boiler or in the microwave in short bursts, stirring frequently. Avoid getting any water or steam into the chocolate, as even a small amount can cause it to seize. Adding a teaspoon of coconut oil or vegetable oil can also help maintain a smooth consistency.
The amount can vary based on preference, but a good starting point is about 1/4 to 1/3 cup of cake mix per 12 ounces of white chocolate. Adjust according to your taste and desired level of cake batter flavor.
Absolutely! While vanilla or Funfetti cake mixes are popular for their classic cake batter taste and fun colors, feel free to experiment with other flavors like chocolate, strawberry, or lemon for a unique twist.
Add sprinkles immediately after coating the popcorn with the white chocolate and cake mix mixture. The sprinkles will adhere to the still-wet chocolate, ensuring they stay in place once it sets.
Typically, it takes about 20-30 minutes for the chocolate to set at room temperature. If you’re in a hurry, you can refrigerate the coated popcorn for about 10-15 minutes, but keep an eye on it to avoid moisture buildup.
Store it in an airtight container at room temperature. It’s best enjoyed within 2-3 days for optimal freshness and crunch.
Yes, feel free to add nuts, dried fruit, or candy pieces for additional texture and flavor. Just make sure to add these extras right after coating the popcorn with the white chocolate and cake mix, so they stick well.
While a double boiler is recommended for even and gentle heating, you can also melt white chocolate in the microwave. Just be sure to do it in short intervals, stirring in between, to avoid overheating and burning the chocolate.
