How To Make Chocolate Chip Pumpkin Spice Cookies
These cookies are so simple – they are perfect to make with kids, because they can feel like they are in on the action, without making a huge mess or having to follow complicated steps.
Using cake mix helps you skip several steps – you don’t need to chill or rest cookie dough, just mix, scoop, and bake!
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper and set aside.
- Combine all ingredients in a large bowl or stand mixer fitted with a paddle attachment and mix on medium speed until well combined, scraping down the sides as needed.
- Using a medium cookie scoop, scoop out the mixture and place on parchment paper about 2 inches apart.
- Bake the cookies for 10 to 12 minutes or until the tops just begin to crack.
- Remove from oven and allow to cool on pan for 2 minutes before transferring to a cooling rack. Repeat until the batter is gone.
