Using boxed cake mix is a great way to get moist, delicious, and chewy soft cookies without having to worry about having a ton of ingredients on hand.

Using boxed cake mix is one of the best easy cookie hacks – you can use the mix as a fabulous base to flavor cookies so many ways, and this recipe brings the most amazing pumpkin spice flavor by using boxed spice cake!

Spice cake is a cake that is made with a mixture of cinnamon, nutmeg, ginger, cloves, and allspice (among other spices, depending on the recipe) – it is full of warm, holiday flavors that pair perfectly with pumpkin!

You can add in more chocolate chips, add nuts or raisins, mix in toffee chips – this recipe is incredibly adaptable, and so easy to mix and bake, you’re going to crave these cookies all fall!

How To Make Chocolate Chip Pumpkin Spice Cookies

These cookies are so simple – they are perfect to make with kids, because they can feel like they are in on the action, without making a huge mess or having to follow complicated steps.

Using cake mix helps you skip several steps – you don’t need to chill or rest cookie dough, just mix, scoop, and bake!

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper and set aside.
  2. Combine all ingredients in a large bowl or stand mixer fitted with a paddle attachment and mix on medium speed until well combined, scraping down the sides as needed.
  3. Using a medium cookie scoop, scoop out the mixture and place on parchment paper about 2 inches apart.
  4. Bake the cookies for 10 to 12 minutes or until the tops just begin to crack.
  5. Remove from oven and allow to cool on pan for 2 minutes before transferring to a cooling rack. Repeat until the batter is gone.

Ingredients 

  • 1 Box Spice Cake Mix
  • 15 oz. pumpkin puree
  • ยฝ cup vegetable oil
  • ยพ cup mini chocolate chips

Instructions 

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper and set aside.
  • Combine all ingredients in a large bowl or stand mixer fitted with a paddle attachment and mix on medium speed until well combined, scraping down the sides as needed.
