Easy, quick, and healthy meals are intimidating sometimes. I have a few classic standbys- my one pot taco skillet, pork tenderloin, or whole roasted chicken- but finding new dishes that don't have a ton of carbs and calories, that are simple and easy, can be a bit tricky.
I gravitate towards one pot meals with just a few ingredients for pure ease- and this One Pot Chicken and Sausage with Olives is a truly easy meal- it only takes four ingredients, has almost zero prep (you're just going to dump stuff in a pan and toss it in the oven) and comes out amazing.
While chicken and olives might not sound like a natural combination, this recipe is truly stunning. The olives give a rich, salty flavor which really helps the chicken shine- and with a little lemon to balance it out, and some heat from a spicy sausage- you have an irresistible dish in no time!
This dinner is insanely easy, and so good. It makes great leftovers, too! I like to serve this on it's own alongside some vegetables, or over a bed of pasta, rice, or cous cous.

This meal is paleo-ish - all of the ingredients are paleo compliant but marinated olives aren't strictly paleo since they often have so much sodium. If you're flexible on this, go for it- but you might want to find a paleo-specific brand if you are sticking to a strict diet.
One Pot Chicken and Sausage with Olives
Ingredients
- 2 chicken breasts, trimmed of excess fat (diced or whole)
- 1 large round of pre-cooked polska kielbasa
- 1 jar, 5.75 oz olives and peppers
- 1 lemon, sliced into thin rounds
Instructions
- Preheat oven to 375 degrees.
- In a large dutch oven, add chicken, sausage, olives and lemons.
- Bake until chicken is cooked through- about 45 minutes.
- Cut sausage and chicken and portion, serve hot!
