This salad is my sister’s absolute favorite. I never would have thought to add strawberries to a savory salad until she asked me to recreate this one our grandmother use to make. It is a great salad for meal prep and can be made a meal by adding any cooked protein of choice, enjoy!

  • 10 oz arugula greens
  • 8 oz strawberries sliced
  • 1 avocado chopped
  • 2 oz feta cheese

Champagne Vinaigrette

  • 1 clove garlic minced
  • ¼ cup Champagne vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1 tsp lemon juice

  • tsp black pepper
  • ½ cup extra virgin olive oil


  • Combine all the champagne vinaigrette ingredients in a jar or bowl, combine well.
