Guinness Floats

If you love rootbeer floats, this recipe is for you. We’re taking the traditional root beer float and swapping the root beer for Guinness – a dark, chocolatey Irish stout – and adding luxuriously rich Irish cream, chocolate syrup, and ice cream – to take it over the top.

You’ll never want the non alcoholic way again after trying these – they are so delicious!

These adult floats are loaded with chocolatey beer flavor and plenty of ice cream, are easy to make, and perfect for parties!

How To Make Guinness Floats

For this recipe, you will need the following:

  • Vanilla Ice Cream – use a good quality, delicious ice cream that you like the flavor of as it is the base of our recipe – just like a root beer float. We prefer French Vanilla for this recipe, but thats just a personal preference, grab what you love. If you’re lactose free, opt for an ice cream with a creamier texture instead of one with more of a sorbet-like feel.
  • Baileys Irish Cream – you can use the traditional Irish cream, or the almond milk version if you’re going for a lactose free float.
  • Guinness Beer – Guinness
  • Chocolate Syrup – this is a great way to add extra flavor and kick – if you have a whiskey chocolate sauce, grab that to make it extra indulgent!

You will need the following supplies:

  1. Two Large Serving Glasses 
  2. Ice Cream Scoop 
  3. Shot Glass 
  4. Spoon 
  1. Place 2 scoops of ice cream into two glasses at least 350mL in size; if you are using larger glasses, you can add an extra scoop!
  2. Add in 1 ounce of Baileys Irish Cream.
  3. Pour about a cup of Guinness beer into each glass to top them off, and drizzle with chocolate syrup if desired. Pro Tip: pour half of the beer in, give it a stir and then pour the rest to incorporate the flavors.

Tips To Perfect Guinness Floats & Recipe FAQs

To make this recipe even more indulgent, you can top with chocolate shavings, sprinkles, whipped cream – the sky is the limit!

Guinness will create a lot of foam with ice cream, we find it is best to pour in on top of the ice cream so you don’t end up with a huge mess. Go slowly to prevent spillage.

FAQs

Could I make the Baileys Irish float non-alcoholic? 

Yes. You could replace the beer with root beer and replace the Baileys with the alcohol-free creamer found in most grocery stores. Using the root beer will make the float sweeter.

What are the best serving glasses to use for floats?

Traditionally floats are served in milkshake glasses which are about 12oz or 350ml. If you do not have these types of glasses, feel free to cut the recipe in half and use 6oz glasses or mason jars. 

Can I make these dairy free?

Absolutely! Baileys makes a delicious almond milk variety and you can use your favorite dairy-free ice cream to make this a delicious lactose-free treat.

Creamy, delicious Guinness floats loaded with Baileys Irish Cream, ice cream, and chocolate syrup to celebrate Saint Patricks Day!

Ingredients 

  • 4-6 scoops vanilla ice cream
  • 2 ounces Baileys Irish Cream
  • 1 500 mL can Guinness beer
  • Chocolate syrup, for topping

Instructions
