Easy Cheesy Shrimp Fajita Quesadillas – delicious fresh shrimp, peppers, onions, and perfectly melted cheese in a hearty seafood appetizer or main dish that you won’t be able to get enough of! These shrimp fajita quesadillas are one of my favorite indulgences in summer.ย

Easy Cheesy Shrimp Fajita Quesadillas

These Cheesy Shrimp Fajita Quesadillas are packed with blackened shrimp, caramelized onions, and browned peppers for a gooey, slightly spicy kick- they make a great dinner or appetizer at a party!

If you’ve never had shrimp in a quesadilla (I understand that shrimp and cheese are not natural bedfellows, for a very good reason), you’re in for a HUGE treat.

These shrimp fajita quesadillas are simple, quick, and BURSTING with flavor – they are simple to make, perfect for a party, and delicious as an appetizer – but hearty and filling enough for a dinner.

These shrimp quesadillas are the perfect blend of fresh shrimp fajita flavor and ooey, gooey, intoxicating cheese – making them the perfect easy dish for a summer day that you’ll want to eat again and again!

These shrimp quesadillas also make trying seafood a little more approachable for kids and seafood-phobic friends, since the quesadilla lets the seafood taste come through, but combines it with comforting classics to create a meal you won’t forget anytime soon!

The Best Cheese for Quesadillas

Quesadillas are pretty basic and easy, right? Melt cheese and you’re done.

But as someone who considers myself a quesadilla connoisseur (aka, I am lazy and often like to throw together quesadillas because they are hearty, quick, and easy….) I’ve found blending cheeses can take your quesadilla from greasy to amazing – quick!

While any melting cheese works in Quesadillas, I find the flavor is best with a blend of cheddar (for flavor) and a part skim cheese like mozzarella to cut down on the amount of grease the cheese adds to the quesadilla.

Cheddar cheese tastes amazing in quesadillas – but it can give off a lot of grease – which can bring out a weird texture, especially with shrimp.

For this reason, I like to make a blend of cheeses – usually opting for sharp cheddar, Cacique’s Oaxaca Cheese (it melts beautifully and has a light, creamy flavor that is heavenly in a quesadilla) and sometimes a little bit of crumbled up queso fresco for it’s tangy, creamy taste – and while it doesn’t melt, it adds a lovely light balance to some of the melted cheese in the quesadilla.

Easy Cheesy Shrimp Fajita Quesadillas

Easy Cheesy Shrimp Fajita Quesadillas – delicious fresh shrimp, peppers, onions, and perfectly melted cheese in a hearty seafood appetizer or main dish that you won’t be able to get enough of! These shrimp fajita quesadillas are one of my favorite indulgences in summer.ย 

Ingredients 

  • 1 tbsp olive oil
  • 1 lb peeled and deveined shrimp
  • 2 bell peppers, sliced into long strips
  • 1 large onion, halved and then sliced into strips
  • 2 tsp blackening seasoning or taco seasoning
  • ยฝ cup shredded sharp cheddar cheese
  • ยฝ cup mozzarella cheese
  • 6 tortillas

Instructions 

  • In a large, heavy pan, heat olive oil until shimmery.
  • Add onions and peppers.
  • Let brown, about 15 minutes.
  • Add shrimp and seasoning, stir to coat evenly.
  • Cook until shrimp just turn pink, remove from heat.
  • Add cheese and shrimp and pepper mixture to tortilla and cook in a clean pan, flipping over when bottom is browned.
  • When cheese has melted, quesadilla is done!
  • Slice and serve!
