Italian Style Classic Sliders
Getting ready for parties or gameday can be daunting. All my boys have their birthdays one month apart so all fall I am looking for easy party foods that kids and adults will enjoy and can be assembled ahead of time. When football season comes, these sliders become part of our Sunday dinner!
The best way to start your sliders is with soft pillowy Hawaiian rolls, they are slightly sweet and the perfect size. I slice the whole set of sliders at one in half then load one side up with my favorite cold cuts and cheeses. If you don’t have all the kinds of cheese and deli meats I have listed in this recipe, just use whatever you have, a good variety gets the best flavor. Next you will make the glaze out of butter and a mixture of spices that will play well with the meats. You will glaze the tops of the buns and bake the sandwiches to help melt the cheese and brown the tops. I make my grinder salad which is similar to coleslaw while the sandwiches bake. When you remove them from the oven, take the tops off and fill with grinder salad for a lovely color contrast and enjoy!
How to Make Classic Deli Meat and Cheese Sliders
First assemble the following ingredients:
For the sliders
- Hawaiian rolls (12) – Soft and slightly sweet, Hawaiian rolls provide the perfect base for savory sliders.
- Ham (8 ounces) – Thinly sliced ham adds a tender, salty bite to the sliders, balancing the richness of the cheese.
- Provolone cheese (4 ounces) – Creamy and mild, provolone melts beautifully, adding a smooth texture to each bite.
- Pepperoni (3 ounces) – Spicy and flavorful, thinly sliced pepperoni gives the sliders a bold, zesty kick.
- Salami (3 ounces) – Thin slices of salami offer a rich, savory flavor with a touch of peppery spice.
For the glaze
- Butter (2 tablespoons) – Melted butter creates a golden, rich glaze that helps bind all the flavors together.
- Parmesan (2 tablespoons) – Grated Parmesan adds a sharp, nutty flavor to the buttery glaze, enhancing the savory elements.
- Garlic powder (1/2 teaspoon) – A dash of garlic powder brings a subtle, aromatic warmth to the glaze.
- Onion powder (½ teaspoon) – Onion powder adds a mild, sweet flavor to balance the garlic in the glaze.
- Garlic salt (½ teaspoon) – A pinch of garlic salt adds an extra layer of savory seasoning to the glaze.
Grinder Salad topping
- Lettuce (8 ounces) – Shredded lettuce brings fresh, crisp texture to the sliders, lightening up the rich meats and cheeses.
- Tomato (1/2 cup) – Diced tomatoes add a juicy, tangy burst of flavor that complements the smoky meats.
- Pepperoncini peppers (1/2 cup) – These peppers offer a tangy, slightly spicy punch that cuts through the richness of the sandwich.
- Mayonnaise (1/4 cup) – Creamy mayonnaise creates a smooth, tangy base for the grinder salad topping.
- Red wine vinegar (1 tablespoon) – A splash of red wine vinegar adds acidity, balancing the flavors of the salad topping.
- Italian seasoning (2 teaspoons) – A blend of herbs infuses the salad topping with classic Mediterranean flavors.
- Salt (1/2 teaspoon) – A touch of salt enhances the natural flavors of both the salad topping and the meats.
- Pepper (1/2 teaspoon) – Freshly cracked pepper provides a mild heat and depth of flavor.
- Garlic powder (1/2 teaspoon) – The garlic powder in the salad topping brings an extra layer of aromatic warmth to each bite.
Use this Method
Prep Bread. Cut the hawaiian rolls horizontally. Lay the bottoms in a baking dish.
Layer. Layer the provolone cheese on the bread. Then add the ham, pepperoni, and salami on top. Place the tops back on the rolls and cut through the sandwiches between each roll.
Combine Topping. Combine the butter, parmesan, garlic powder, and salt. Spread over the tops of the slider sandwiches.
Bake. Preheat the oven to 350?F. Bake for 15-20 minutes or until the cheese is melted and the tops are golden brown.
Make Salad. While the sandwiches bake, make the grinder salad by whisking together the mayonnaise, red wine vinegar, Italian seasoning, salt, pepper, and garlic powder to form a dressing. Toss the lettuce, tomatoes, and pepperoncini peppers together with the dressing.
Assemble and Enjoy. Once the sandwiches are done, remove the tops, add the grinder salad and put the tops back on. Serve immediately.
Tips and Tricks to Making Deli Sliders
Melt the cheese evenly: Use provolone or other easily meltable cheeses, and bake just long enough to get a gooey, satisfying melt without overcooking.
Toast the tops of the rolls: Lightly toasting the tops in the oven after brushing with butter adds a delicious golden crust and enhances texture.
Prepare the glaze ahead of time: Mix the butter, Parmesan, and seasonings for the glaze in advance for quick assembly and even flavor distribution.
Layer strategically: Place cheese directly on the bottom roll to act as a barrier and prevent the bread from getting soggy, then layer meats on top.
Use parchment paper: Line your baking sheet with parchment for easy cleanup and to prevent the sliders from sticking.
Press down before baking: Gently press the sliders down after assembling to help them hold together and compact the flavors.
Cover with foil: When baking, cover the sliders with foil to trap moisture and prevent the tops from browning too quickly.
Finish uncovered for a crispy top: For the last few minutes of baking, remove the foil to allow the tops of the sliders to turn golden and crisp.
Customize your glaze: Experiment with adding herbs, Dijon mustard, or Worcestershire sauce to the glaze for more depth of flavor.
Serve hot: Sliders are best enjoyed straight from the oven while the cheese is melted and the rolls are soft and warm.
Offer dipping sauces: Serve with side sauces like marinara, ranch, or spicy mustard for extra flavor variety.
Make in batches: For parties, prepare multiple batches ahead of time and bake them as needed to keep sliders fresh and warm.
Prep the Grinder Salad topping ahead: If using salad as a topping, make it in advance so the flavors have time to meld, making it more flavorful.
FAQs
Classic mini slider buns, Hawaiian rolls, or dinner rolls are perfect. Look for soft, fluffy rolls that can hold up to toppings but won’t overwhelm the small patties.
Place cooked sliders on a baking sheet in a 200°F (93°C) oven while you finish cooking. Cover loosely with foil to prevent them from drying out.
Place a thin layer of cheese or a lettuce leaf directly on the rolls before adding cold cuts to create a barrier that prevents moisture from soaking into the bread.
Arrange sliders on a large serving tray, optionally bake them for a warm option, and serve with condiments on the side for easy customization.
Yes, you can freeze assembled (but unbaked) sliders. Wrap them tightly, store in an airtight container, and thaw before baking or serving cold.
Plan for about 2–3 sliders per person for appetizers, and 3–4 per person if serving as a main dish, depending on other foods available.
Use whole-grain or low-sugar Hawaiian rolls, leaner cold cuts like turkey or chicken, and lighter cheese options. Skip or reduce the glaze to cut back on butter.
