My family loves potatoes, and bacon – we’ve had many dinners of jacket potatoes loaded with cheese and butter and topped with bacon – so I decided to take their favorite dinner and make it in one easy, cheesy casserole that is perfect as a hearty side dish alongside turkey – or even great on it’s own, as an indulgent main dish.

We tuck into this casserole often – it is super simple, packed with my kids favorite flavors, and is the ultimate hearty, stick-to-your-ribs potato recipe!

How to Make Cheese and Bacon Loaded Potato Casserole

First, we will need to assemble the following ingredients:

  • Russet potatoes (3 lbs) – Russet potatoes provide a starchy base, giving the casserole its hearty and fluffy texture, prebake potatoes.
  • Sea salt (1/4 teaspoon) – A pinch of sea salt enhances the natural flavors of the ingredients.
  • Black pepper (1/4 teaspoon) – Black pepper adds a subtle kick of warmth and depth to the dish.
  • Bacon (1 pound) – Crispy, smoky bacon brings a rich, savory crunch to every bite.
  • Sour cream (2 cups) – Sour cream adds a creamy tanginess, balancing the richness of the casserole.

Once you gather your ingredients, we will use the following method:

  • Prep. Preheat oven to 350° F. Cut warm baked potatoes into bite size pieces. Place half in a greased 9×13 inch baking dish. 
  • Sprinkle. Sprinkle half of salt and pepper. Layer half of bacon, sour cream and shredded cheese.
  • Repeat layers.  Bake uncovered for 20 minutes or until cheese is melted and the entire dish is warm. 
  • Enjoy. Sprinkle with onions and enjoy!

  • 3 pounds Russet potatoes, unpeeled, baked
