Pizza Eggs

My dad isn’t specifically known for his cooking prowess. He can throw things together if need be- but there are very few recipes I make that I attribute to him. Sure, there are dishes he loves and so they make me think of him- but very few he makes. It’s not that my dad can’t cook- it’s just that he likes a lot of food I don’t love (read: anything doused it ketchup. Even lasagne and tacos. I kid you not!) and he’s pretty picky when it comes to meats and a lot of things I like to cook. But there is one recipe I grew up with that is unapologetically all dad- his famous, delicious, ooey, gooey and tasty Pizza Eggs!

I don’t know exactly where pizza eggs came about- but I know that either when he was in college or early on in dating my mom he came up with this concoction to use up cold pizza the morning after a long night- which is a tiny bit ironic since everyone in my family loves cold pizza just as is. Anyways, he figured you could make scrambled eggs with pizza.

And man, oh man, can you ever!

Pizza eggs are so delicious, and so easy. They are filling, and have enough “vitamin G” (grease) to soak up whatever is still haunting you from the night before. We used to eat these all the time when on ski trips- and they’d fill you up to get you going all day on the slopes.

And if you are in Colorado- there is no better pizza (for eggs or otherwise) than Big Bill’s NYPD in Centennial. ’nuff said!

Pizza Eggs
  • 5 eggs
  • 2 slices leftover pizza- any topping (gluten free fine)
  • 2 tbsp butter or oil
  1. Crack eggs and place in large bowl.
  2. Whisk until fully combined and slightly frothy.
  3. Microwave pizza slices for 10 seconds just to soften up cheese.
  4. Using a fork or your fingers, scrape toppings and cheese off pizza.
  5. Stir in to eggs, whisk to completely combine.
  6. In a hot pan on medium high, melt butter.
  7. Add egg combination, and stir until fully cooked- about 6-10 minutes.
  8. Serve and enjoy!


This recipe is great because you can use all sorts of pizzas- and it can be made gluten free (start off with gluten free pizza), meat free, etc! My personal favorite combination is extra cheese, mushroom and sausage- it works beautifully with the eggs! I’m not a huge fan of pepperoni with them, but I know a lot of people who do. Really any of your favorite toppings will work- let me know what YOUR favorite combo is!
