Easy chicken fajitas are sort of a dream – they are so delicious, fresh, and bursting with flavor.
I love making fajitas, but I hate all of the sautéing in a hot and smoky skillet on busy weeknights… especially when I dont feel like cleaning.
This fajita skillet dinner is so simple and easy – just chuck it in the oven and it’s done in under 20 minutes with only one pan to clean up – and you still get that delicious sizzling meal!
This dinner is the easiest way to get restaurant style fajitas at home. You do need to make sure you add your cast iron pan to the oven before adding the food, as it helps cook quickly.
If your chicken is sliced thin, be sure to check at about 10 minutes, as it might cook a bit faster the thinner you slice. For thicker chicken, it might need a couple minutes more – just check the internal temp as you go to be sure.

Ingredients
- 2 tbsp oil
- 1 lbs Chicken , 2 breasts, sliced thin
- 1 bell pepper, sliced into strips
- 1 onion, halved and sliced into thin crescents
- 2 tbsp taco seasoning
- 1 lime, - 1/2 juiced, 1/2 sliced into thin rounds
- 12 cloves garlic
Instructions
- Preheat oven to 425 degrees, with heavy cast iron pan in the oven.
- When pan is hot, add oil and ingredients and toss in taco mix.
- Toss well.
- Bake at 425 15-20 minutes, until chicken is opaque and 165 degrees internally.
- Serve immediatey with beans and rice, in tortillas, or on a salad with cheese!
