If you love delicious pumpkin spice and caramel chip flavors in fall, this easy air fryer cookie recipe is for you!

If you’ve never used an air fryer to bake cookies, get ready to have your mind blown with how easy it is to get fresh, delicious just baked cookies in no time.

This recipe works with Instant Pot and Ninja Foodi pressure cookers with an air fryer function – or with air fryer machines, too!

You can make a big batch of cookies and keep the dough in the fridge or freezer, and pop them in the air fryer when you’re ready for a sweet treat, for fresh baked cookies you can make anytime!

How to Make Air Fryer Pumpkin Butter Cookies:

To make this recipe, you’ll need:

  • Instant Pot with Broiler Lid or Ninja Foodi
  • Parchment Paper
  • Mixing Bowls
  • Fork
  • 1/4 cup pumpkin puree
  • 1/2 cup pumpkin butter
  • 1/2 cup butter
  • 2 3/4 cup flour
  • 1 tbsp pumpkin spice
  • 1 tsp baking soda
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup butterscotch morsels
  • 1 tbsp powdered sugar

Tips and Tricks to Perfect Air Fryer Pumpkin Butter Cookies

Baking cookies in an instant pot or ninja foodi – using the bake function with the broiler lid – is incredibly easy, but there are a couple steps you can take to make it even easier!

When using the broiler lid on an instant pot or ninja foodi, you’re really turning your machine into a convection oven.

The air circulates around cookies to bake just like in a convection oven – without heating up the whole house!

Perfect for small batches. Baking in an Instant Pot is admittedly not the best for making big batches – but is perfect for when the craving hits and you want a few cookies to hit the spot.

Keep cookie dough on hand. I personally recommend making up a big batch of this cookie dough and keeping in the fridge, so you can bake cookies in a flash anytime you want to indulge!

Recipe FAQ’s

Can I bake these cookies without an Instant Pot?

Yes! Bake for 12-15 minutes at 350 degrees in your oven if you don’t have an instant pot.

Can I make these cookies without Instant Pot Broiler lid?

No – this recipe relies on the bake function in a dual functioning pressure cooker. Please bake in oven if you don’t have an air fryer.

Instant Pot Pumpkin Butter Cookies Recipe

Ingredients 

Instructions 

  • Add all dry ingredients except butterscotch to a bowl and stir to combine.
  • Using a stand or hand mixer, cream pumpkin butter and butter together.
  • Add pumpkin puree and vanilla and blend.
  • Add dry ingredients and mix on medium speed until dough ball forms.
  • Fold butterscotch morsels into dough.
  • Using an ice cream or cookie scoop, form dough into 1" balls.
  • Use a fork to gently flatten balls.
  • Place in air fryer at 350 for 8 minutes.
  • Repeat until all cookies are baked.
  • Allow cookies to cool for 5 minutes before removing.
  • Enjoy!
