Delicious and healthy Easy Keto Fried Rice Recipe – diced cauliflower, broccoli, carrot and celery pan fried to perfection with a tasty garlic sauce!

Fried rice doesn’t get a reputation for being exceptionally healthy – but this fried rice is full of color, flavor, and nutrients, so you don’t have to feel bad about digging in.

This keto fried “rice” is completely rice, gluten, and grain free – but is bursting with flavor from plenty of garlic as well as loads of riced cauliflower, broccoli, carrots, and celery.

You won’t miss the rice with this dish – and we’re even tossing it in a rich, delicious, garlicky sauce that tastes just like soy sauce – while still being keto diet approved!

This keto fried rice is also designed to be vegan friendly – you can use or skip adding eggs to this dish as you please, it will be delicious either way!

Vegan Keto Fried Rice

I designed this recipe to fit two seemingly different diets – it is both keto approved and vegan.

While this dish can be made with egg (directions directly below), this easy keto side dish was made to balance without egg by using flax meal, and pumpkin seeds, cashews, or peanuts.

To up the fiber, heart healthy fats, and protein of this dish, feel free to add hemp hearts, walnuts, flax seeds, or other seeds/nuts you love.

Keto Fried Rice With Egg

If you love having eggs in your keto fried rice, no worries, this recipe is even more delicious when adding them!

To add egg to your keto fried rice, please follow these steps:

-Make rice as called for in the recipe below.
-As vegetables soften, crack two eggs into a small bowl.
-Vigorously beat eggs until light and well combined.
-Turn stove heat to high.
-While tossing vegetables, slowly drizzle in eggs.
-Stir to finish cooking eggs, garnish, and serve.

Keto Soy Sauce

Since soy sauce doesn’t work with a keto diet, it is important to find a delicious and keto approved substitute.

For this recipe, since the delicious sauce is so important to the flavor, I reccomend using Coconut Aminos or Garlic Coconut Aminos, and a touch of nutritional yeast.

What To Serve With Keto Fried Rice

This healthy fried rice is light but feels hearty – it is salty, crunchy, a little sweet, and so delicious.

I love to pair fried rice with sweet chili glazed salmon burgers, pan fried asparagus, slow cooker ribs, or even alongside paella kebabs, pan fried pork chops, or air fried chicken drumsticks.

How To Store Keto Fried Rice

-Store food in the smallest container possible.
-This dish is very prone to picking up flavor from your container. Consider using a glass container to reduce “tupperware taste”.
-Refrigerate or freeze leftovers immediately – store in fridge for up to four days, and freeze for up to three months.

How To Reheat Keto Fried Rice

-To reheat keto fried rice, I reccomend pan-frying with 1 tbsp avocado oil on medium high heat until piping hot.
-Microwave for 1-2 minutes, stirring partway through, if microwaving.
-Place in a foil pouch to bake or heat in toaster oven, heat to piping hot.

While this dish freezes and reheats beautifully, please always heat all the way through to reduce the risk of cross contamination.

How To Make Vegetable Rice

Making vegetable rice is pretty simple – you just need to dice, chop, shred, or rice broccoli and cauliflower stems.

While you can use the crowns of both broccoli and cauliflower, I find they get too soft and mushy, so I prefer to use finely diced cauliflower and broccoli stems instead.

The stems of the vegetable give a toothier bite, similar to rice – whereas the crowns can get mushy, like a porridge.

You can also use pre-riced bags of cauliflower and broccoli rice – which is my pick for easy prep.

Easy Keto Fried Rice Recipe

This delicious keto fried rice is a super simple delicious side or base for your favorite protein!

Ingredients

  • 2 tbsp avocado oil
  • 1 large shallot diced
  • 2 cups diced broccoli stems remove woody bottom bit, use anything but the bright green leafy tops – save for another recipe*
  • 2 cups diced cauliflower stems remove woody bottom bit, use anything but the bright green leafy tops – save for another recipe*
  • 2 carrots peeled and diced*
  • 2 stalks celery diced*
  • 2 cloves garlic diced
  • ½ cup pumpkin seeds
  • 1 tsp fresh cracked pepper
  • ¼ cup garlic coconut aminos

Instructions

  • In a large pan on medium high heat, add oil to pan and heat to shimmery, about 1 minute.
  • Add diced shallots and stir occasionally to brown and soften, about 2 minutes.
  • Stir in diced broccoli and cauliflower stems, carrot, and celery.
  • Season with pepper (do not add salt as coconut aminos can be very salty naturally) and toss.
  • Cook, stirring occasionally, on medium high until vegetables have softened and become aromatic, about 5 minutes.
  • Stir in coconut aminos, toss well to evenly coat vegetables in sauce.
  • If adding eggs, crack two eggs in a small bowl and whisk vigorously to combine well. Drizzle eggs over dish, tossing as you slowly drizzle in eggs, to make "ribbons" instead of clumps of cooked egg.
  • Remove from heat and garnish with parsley, sesame seeds, or diced peanuts if desired.
  • Serve immediately.

Notes

*You can swap out diced vegetables for one 16 oz bag cauliflower hash, vegi rice, broccoli rice – prepped uncooked diced cauliflower and broccoli stems
