Easy Roasted Beets and Sweet Potatoes
We like to toss our sweet potatoes with Italian herbs, salt, pepper, garlic powder, and a bit of cayenne pepper to give a bit of a kick to counter out the sweet notes from the sweet potatoes and beets – it is a great mix of salty, earthy, sweet, and buttery for a side dish that is great with hearty fall favorites like The Best Baked Pork Tenderloin, The Best Ribeye Roast, The Best Oven Roasted Turkey Breast, Easy Cajun Whole Roasted Chicken, Easy Lemon Garlic Baked Cod, The Best Slow Cooker Baked Beans, and more!

How To Roast Beets and Sweet Potatoes
Roasting beets and sweet potatoes is a super simple and straightforward process – we’re just simply prepping our vegetables, seasoning them, and then roasting, so the oven can do all the work for us.
Most of the work for this recipe will come from your prep – and will involve peeling sweet potatoes and beets.
You will want to remove the skin from beets, but you can keep the skin on your sweet potatoes if you’d like to. Using store-bought prepped beets can save a huge amount of time – I buy the kind that is vacuum-packed in the grocery store’s produce cooler section often.
After roasting, we’re going to make a super quick garlic butter to toss the vegetables in – you can do this right after pulling the sweet potatoes out of the oven, it only takes a minute or two to toast the garlic and melt the butter.
- Preheat oven to 350 degrees.
- In a large bowl, drizzle olive oil over beets and sweet potato chunks and toss in Italian herbs, garlic powder, cayenne pepper, salt, and pepper.
- Spread out on nonstick baking sheet and roast 25-30 minutes, until lightly browned and soft to the touch.
- Remove from oven.
- In a small pan, melt butter.
- Add garlic and heat until fragrant, about 45 seconds, stirring to keep from burning.
- Remove from heat.
- Drizzle over sweet potatoes and beets and toss.
- Serve and enjoy!
Tips to Perfect Roasted Beets and Sweets
For the easiest cleanup, use a nonstick baking sheet when roasting sweet potatoes and beets.
Use plastic gloves to remove beet peel to prevent staining hands.
Can use pre-packaged, pre-cooked beets from store to save time and prevent staining, as they will not stain hands.
Save time by using pre-packaged chopped raw sweet potato, often available in grocer’s produce section.
If you don’t want to use butter, you can toast garlic in olive oil and toss beets and sweets in olive oil, instead of butter, for a vegan side dish.

Sweet potatoes and beets are done roasting when they have lightly browned and are soft when pressed lightly with a fork.
We recommend roasting at 350 degrees Fahrenheit.

Ingredients
- 2 large sweet potatoes, peeled and cut into 1″ chunks
- 4 large beets, skins removed and cut into 1″ chunks
- 1 tablespoon olive oil
- 1 tablespoon Italian Herbs seasoning blend
- 2 teaspoons garlic powder
- 1 teaspoon sea salt
- 1 teaspoon fresh cracked black pepper
- 2 tbsp butter
- 3 cloves garlic, minced
- ½ – 1 teaspoon cayenne or aleppo pepper, optional
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, drizzle olive oil over beets and sweet potato chunks and toss in Italian herbs, garlic powder, cayenne pepper, salt, and pepper.
