Lobster and pasta in a creamy, cheesy sauce, this Instant Pot Lobster Brie Pasta is a decadent and flavorful dish. It’s easy enough for a weeknight, and decadent enough for a date night.

Easy Instant Pot Lobster Brie Pasta

With a creamy brie sauce base, plenty of delicious spices, and of course mouth watering lobster tails, this dish is always a hit! Serve it for dinner, a date night, or become the star of your next pot-luck dinner with this easy Instant Pot lobster brie pasta. 

Brie is an off-white soft, ripened cheese. It has a mild, buttery, and creamy taste which is what makes this dish so delicious. Combined with broth and other spices, it creates a creamy sauce base that pairs perfectly with this lobster and pasta, but you could even throw in chicken, shrimp, or steak instead.

How To Make Instant Pot Lobster Brie Pasta 

Each ingredient in this recipe brings this dish together with delicious complex flavors everyone will love. Get your your shopping list out and jot these ingredients down:

  • Lobster tails– For the most amount of meat and best quality in taste and texture, look for lobster tails ranging from 5oz to 12oz. 
  • Vegetable broth– We use vegetable broth to add a little flavor to the lobster tails as they cook in the Instant Pot. You could use water, instead, but they won’t have as much flavor. 
  • Dry white wine– If you don’t have any white wine, you could use white wine vinegar instead. 
  • Minced garlic– I used garlic cloves, but you could also use pre-minced garlic in a jar if you don’t want to do all the mincing. 
  • Fettuccine noodles– I find that fettuccine noodles work best in the Instant Pot, but you could use other pasta as well. 
  • Butter– Let the butter sit out at room temperature on the counter to soften. 
  • Minced shallot– Similar to an onion, the minced shallot adds a milder sweeter flavor to the dish. 
  • Black truffle oil– Truffle oil boosts and balances the flavor of dishes while adding a complex earthy flavor and aroma. 
  • Brie– Cut your cheese into 1 inch pieces so they can easily be combined into the sauce. 
  • Milk– It’s best to use whole fat milk for this recipe. Using low fat milk will result in a less creamy sauce. 
  • Flour– Do not pack the flour. Instead, scoop the flour into the measuring cup and level it off with a butter knife. 
  • Chopped chives– Similar to green onions, chopped chives add a delicious flavor to the dish. 
  • Sea salt– Just a little bit will work.

Once you’ve gathered all the ingredients, get out your Instant Pot for the easiest lobster dinner you’ve ever made! 

  1. First, set your Instant Pot to sauté. Then, pour 1 cup of vegetable broth, wine, and ¼ cup of butter into the pot. 
  2. Add the garlic and thyme. Then, place the lobster tails into the pot and let them cook for 4-6 minutes. 
  3. Remove the lobsters from their shells (see below for directions). Then, roughly chop the lobster meat. Turn off the Instant Pot.
  4. Remove ¼ cup of broth from the Instant Pot and set it to the side. Keep the rest of the broth in the Instant Pot. 
  5. Add 1 cup of vegetable broth, sea salt, and noodles to the Instant Pot. Seal it, hit the manual or pressure cook button, and set the time for 9-minutes. 
  6. Allow a 5-minute natural release and then quickly release the rest of the steam.
  7. Place the fettuccine noodles in a large bowl and toss with truffle oil. 
  8. Place ¼ cup of butter into the Instant Pot. Once it has melted, add the flour and whisk it to make a rouge. 
  9. Next, add the cut brie, shallot, whole milk, and the broth you set to the side above. Stir until melted and smooth. 
  10. Add the noodles, lobster, and chives to the sauce in the Instant Pot. Toss and serve!

Tips and Tricks to Perfect Lobster Brie Pasta and FAQs: 

  • Check that the lobster shells are bright red, and the meat is opaque. The internal temp of the lobster should reach 140?.
  • I used 5 ounce lobster tails, so they needed to cook for about 5-minutes. If you are using bigger tails, be sure to adjust the cooking time. Cook for 1-minute per ounce. 
  • If the sauce is not as thick as you would prefer, you can add more flour to thicken it up. Start with just a teaspoon at a time.

What temperature should I cook this recipe at?

You won’t have to worry about a temperature since you are cooking using your Instant Pot. Using the saute button, you will basically boil the lobster, and with the manual setting, the Instant Pot will be set to high pressure. 

How long does this recipe take to make?

This recipe doesn’t take very long to make. You will need about 10-minutes of prep time and 25-minutes of cook time. So, you can have a delicious lobster meal on the table in about 35-minutes. 

How do I remove the lobster from the shells?

After your lobster is cooked, cut the shells down the middle with a pair of kitchen shears. Then, gently tug the meat until it comes out of the shell. 

Can I just boil the lobster tails?

Sure. I like to use the saute function on my Instant Pot because then I only have one pot to clean, but you could boil your lobster tails instead. If you prefer to boil them, place the lobster tails in boiling water, and boil them for 1-minutes per ounce of tail. For example, a 4 ounce tail will need to boil for 4-minutes. 

How do I store leftover lobster brie pasta?

This dish can be stored in an airtight container in your refrigerator for about 2-3 days. However, keep in mind that the pasta will continue to absorb the liquid, so after 2-3 days, the pasta will be mushy. Reheat any leftovers in the microwave.

Ingredients

  • 3 lobster tails
  • 2 cups vegetable broth
  • ¼ cup dry white wine
  • 5 garlic cloves minced
  • 1 lb fettuccine noodles
  • 1 tsp sea salt
  • 2 tbsp black truffle oil
  • ½ cup butter
  • 1 tbsp minced shallot
  • ¼ cup flour
  • 8 oz Brie cut into 1” pieces
  • ¼ cup whole milk
  • 3 tbsp chopped chives

Instructions

  • 1. Prepare the lobster tails. Set the instant pot to sauté. Pour 1 cup vegetable broth, wine, and ¼ cup butter into the instant pot. Add garlic and thyme. Place lobster tails into the instant pot and set to sauté. Cook for 4-6 minutes. ** The internal temp of the lobster should reach 140* . Check that the lobster shells are bright red, and the meat is opaque. **

  • 2. Remove lobsters from their shells by cutting down the middle with kitchen shears and gently tugging the meat. Roughly chop. Discard the shells and turn off the instant pot.

  • 3. Remove ¼ cup of broth from the instant pot and set aside to use in the cheese sauce. Keep remaining sauce in the instant pot.

  • 4. Add 1 cup vegetable broth, sea salt, and noodles to the instant pot. Seal and set to manual high pressure for 9 minutes. Allow 5 minutes of natural release then quick release remaining steam.

  • 5. Add noodles to a large bowl and toss with truffle oil.

  • 6. Add ¼ cup butter to the instant pot. Once melted, add flour and whisk to make a roux. Next, add Brie cubes, shallot, whole milk, and the broth stir until melted and smooth.

  • 7. Next, add the noodles, lobster, and chives to the instant pot and toss with the sauce.

  • 8. Enjoy!
