These easy bacon and cheese bites are simple, delicious, and loaded with flavor.

How To Get Perfect Crunchy Bacon
To get perfect crunchy bacon, there are two methods – use pan fried bacon that you let cool, and then crumble – or cut it and pan fry bits to crunchy.
To cut bacon bits, I like to cut it with kitchen scissors when still cold, then pan fry until brown and crispy.
Bacon is easier to cut when cold – and we find it crisps up more evenly to cut before cooking instead of crumbling after cooking whole slices of bacon.
Let bacon rest on paper towels to drain off excess grease before adding to cheese dip – letting the grease drain off will help your bacon get extra crunchy and perfect for this cheesy dip!

- 1.9 ounce package phyllo cups
- 8 ounces brie or camembert cheese
- raspberry preserves
- 4 slices cooked bacon, finely chopped
Other Preserves You Can Use
We love this easy appetizer with raspberry preserves, but you can use any tart and sweet preserves you like!
We prefer using preserves over jams or jellies, because we like the slightly more tart, chunky fruit style and less sweet jellies that are thin.

These cheese bites are perfect to prep ahead of a party, because you can assemble them and wrap them in plastic wrap and store in the refrigerator until ready to bake.
They can store for up to two days in the fridge before serving.
You’ll know bacon cheese bites are done when the dough has lightly browned and cheese is melted and bubbly.

Easy Bacon Raspberry Cheese Bites
Equipment
Ingredients
- 1.9 ounce package phyllo cups
- 8 ounces brie or camembert cheese
- ? cup raspberry preserves
- 4 slices cooked bacon, finely chopped
Instructions
- Preheat the oven to 325 degrees F.
- Remove the cups from the package and arrange them on a small baking sheet.
- Remove the rind of the cheese and divide into 15 even pieces and place one in each of the cups.
- Add 1 teaspoon of raspberry preserves to each of the cups.
- Top each cup with crumbled bacon and bake for 5 to 7 minutes until the cheese has melted.
- Enjoy warm or at room temperature.
Notes
- Phyllo cups are found in the freezer section near the phyllo dough. You can bake from frozen, they are very thin so no need to thaw before using.
- Brie is a more crowd-pleasing cheese option since camembert can have a fairly rustic and acquired flavor.
