There is nothing I love more than tacos. Taco Tuesday is like a holiday to me - and if there's one thing that I am always craving, it is meaty cheesy taco flavor.
When I don't have time to prep and come up with a fun and unique take on my favorite handheld meal, I am always working tasty taco flavors into other dishes.
This Cheesy Taco Pasta Bake is super simple and full of flavor using ingredients you probably already have on hand, and takes just one pot!
When I'm hurried for a meal on a busy weeknight, there is nothing better than a creamy, cheesy dish my whole family will love - and this baked pasta totally fits the bill.
You can even use leftover pasta or diced steak (or chicken, pork, etc)- whatever you have on hand.
This is a super simple recipe to modify to your own tastes or dietary issues as well - you can easily use gluten free pasta, swap out the bell peppers for another veggie you love, change up the beans you use (I love black beans, but chili beans and pinto beans go in this recipe really well), or add in other vegetables you love.
You can also top this baked pasta with sour cream or fresh crema!

If you're looking for the best melty cheese, I LOVE using Cacique's Oaxca cheese. It melts fabulously and stretches like a dream - and it has a mild mozzarella flavor that is fantastic in all sorts of dishes.
For the green chile sauce, I use Hatch 505 green chile, or a Las Palmas' green chile enchilada sauce. If you don't love green chile sauce, you can easily use salsa!
If you have leftovers, you can reheat this in the microwave, or again in the oven. When I do reheat this pasta bake in the oven, I always add a little more green chile sauce because the pasta can dry out a bit. I just add a little more over the top and sprinkle a little more cheddar over it for an awesome meal that is just as good the second time around!

Super easy cheesy taco pasta bake is a huge crowd pleaser with tons of flavor! One pot taco pasta with tons of cheesy steak flavor.
Ingredients
- 1 lb grilled diced steak or stew meat, or any other grilled meat you'd prefer
- 1 large bell pepper, diced
- 2 cups shredded sharp cheddar cheese, divided
- 8 oz oxaca or other skim cheese, diced
- 2 cups macaroni, cooked
- 2 tablespoon taco seasoning
- 1 can diced tomatoes, drained
- 1 can black or pinto beans, drained
- 1 cup green chili sauce
- ¼ cup olives
Instructions
- Preheat oven to 350 degrees.
- In a well greased large baking dish, combine all ingredients but olives and 1 cup of shredded cheese and mix thoroughly.
- Top with 1 cup shredded cheese and olives.
- Bake for 35-40 minutes until cheese is bubbly and slightly browned.
- Serve immediately.
