With summer in full swing, it’s a bit easier and tastier to eat delicious, low-carb foods since there are so many beautiful, fresh vegetables in season.

This is the time of year I’m often feeling pretty bad due to crazy schedules and increased activity which throw my rheumatoid arthritis for a loop – so I really try to focus on eating healthier when fruits and vegetables as much as I can at home in summer.

One of the things that I have found helps me with my own health issues is sticking to a low carb, primarily vegetable-based diet – with some meat and dairy thrown in to accent my meals. It’s not my favorite way to eat, but my body always feels better when I majorly increase my veggie intake and try to cut out processed foods or too many grains/glutens (which, after my two week trip to Ireland I just came home from I really need!!).

This recipe for Taco Stuffed Avocado Boats is a perfect indulgent but healthy meal- loaded with veggies (the taco mixture we’re using is packed with hidden vegetables) and lighter on the meat and cheese, this meal is packed with heart-healthy fats, protein, fiber, iron, and calcium.

And trust me when I say nothing about it tastes like diet food!

This recipe is perfect for big batch meals – simply use the recipe below as the amount for one person.

 

Hot tip: While I prefer baking this recipe (for the best flavor), it can be microwaved for a quick and healthy meal that can be made-ahead.

If you are making these ahead of time, splash a little lime juice into your avocado before adding taco meat to help keep the inside from becoming completely oxidized and brown.

 

While this recipe is a bit higher on the calories and fat, that largely comes from the avocado.

To lighten up the recipe even more, try using my paleo vegan taco mixture, or this chicken slow cooker taco skillet (just omit the cheese, since we’re topping the avocado with cheese anyways.)

 

In a healthy, well rounded diet full of fresh, unprocessed foods, this dinner won’t break your diet goals unless you’re strictly limiting fat and calories. It is high fat, but again, that is largely from the avocado, which is well recognized as a healthy source of fat.

Low carb taco stuffed avocados are a simple, quick, and delicious meal perfect for gluten and grain free diets. Creamy, rich, and full of flavor - without tasting like diet food!
Ingredients
  • 1avocado, sliced in half and pit removed
  • 1 cup low carb taco skillet mixture, without cheese added (1/2 cup per avocado)
  • 2 oz sharp cheddar cheese, shredded (omit if sticking to paleo/whole 30 diet)
  • handful arugula
  • diced onion, tomatoes to garnish
Instructions
  1. Preheat oven to 350 degrees.
  2. Halve avocado and remove pit.
  3. Scoop ½ cup taco skillet mixture into each ½ avocado.
  4. Add arugula to the top, followed by cheese.
  5. If taking to work, wrap with foil and refrigerate until ready to microwave, then microwave for 45-55 seconds, until meat is warmed and cheese has melted.
  6. If preparing in the oven, bake for 15 minutes, just until cheese is melted.
  7. Garnish with fresh diced onion and tomato, serve immediately.
