To Make These Keto Ham and Cheese Rolls, You’ll Need:

  • Mozzarella cheese (¾ cup) – Melty mozzarella cheese creates the soft, chewy texture that gives these keto rolls their classic bread-like bite without the carbs.
  • Cheddar cheese (½ cup) – Sharp cheddar adds rich flavor and a savory depth that makes each roll extra satisfying and cheesy.
  • Grated parmesan (½ cup) – Nutty parmesan brings a salty, crispy finish and helps add structure to the rolls as they bake.
  • Ham (1 cup) – Diced ham adds hearty protein and smoky, savory flavor that turns these rolls into a filling keto-friendly snack or meal.
  • Eggs (2) – Eggs help bind the dough together while adding richness and helping the rolls bake up fluffy and golden.

Steps to Make Gluten Free Ham and Cheese Rolls

Once you have assembled the ingredients, use this method:

Mix

Combine the shredded cheese and egg in a bowl and mix it until the ingredients are fully combined. Stir in ham. Set out a well prepped baking sheet – greased or lined with parchment or a silpat. Form 8 rounds on the parchment paper.

Bake

Bake at 375 degrees for about 15 to 20 minutes until the cheese has fully melted and created a slight brown crust. Feel free to mix up your cheese selection – but stick with one grated hard, dry cheese (like parmesan or asiago) to keep the flour-like texture.

Tips and Tricks For Perfect Easy Keto Rolls

Bread Like Texture. Keep at least one hard grated cheese like parmesan or asiago in the mix to help create a more bread-like texture without flour.

Bread-like rolls. Use a Silpain mat or similar perforated silicone baking mat over your cookie sheet. Any extra egg liquid will drop below the mat, allowing the bread to create a crispier crust that mimics fresh artisan bread.

Line Pan. Line your baking sheet with parchment paper, a silpat, or a perforated silicone mat to prevent sticking and help the rolls crisp up evenly.

Dice. Dice the ham into very small pieces so it distributes evenly throughout the rolls and helps them hold together better while baking.

To Get a Soft Keto Bread for a Tortilla or Wrap. Bake on parchment paper or foil and trim off any egg liquid that runs off from rolls. Don’t cook until crunchy browned, bread will be fully cooked, but not crispy on the top.
